Comparative analysis of growth and meat production performance and muscle quality of F1 and pure Hu sheep

为探究不同杂交组合肉羊生长性能、产肉性能和肉品质的差异,本研究选择 2 月龄的湖羊 F1 代(♂湖羊×♀湖羊,HH)、澳湖 F1 代(♂澳洲白羊×♀湖羊,AH)、南湖 F1 代羊(♂南丘羊×♀湖羊,NH)和陶湖 F1 代(♂陶赛特羊×♀湖羊,TH)公羔各 12 只,进行饲喂试验,预饲期 10 d,正试期 60 d.饲喂结束后,每组随机选择 6 只进行屠宰,测定屠宰性能和肌肉品质.结果表明:1)南湖 F1 代和陶湖 F1 代的平均日增重显著高于湖羊(P<0.05).2)澳湖 F1 代、南湖 F1 代和陶湖 F1 代宰前活重显著高于湖羊(P<0.05).3)澳湖 F1 代、南湖 F1 代和陶湖 F1 代大理石花纹评分显著高于湖羊(P<0.05),而肌肉剪切力、熟肉率、蒸煮损失、亮度 L* 和黄度 b* 值虽高于湖羊但差异不显著(P>0.05).4)澳湖 F1 代粗脂肪含量显著高于湖羊,南湖 F1 代粗脂肪和干物质含量显著高于湖羊(P<0.05).5)南湖 F1 代总氨基酸和甜味氨基酸含量较纯种湖羊 F1 代分别提高 15.76%和 17.83%(P<0.05),而鲜味氨基酸南湖 F1 代显著高于陶湖F1 代(P<0.05);且丝氨酸、丙氨酸、天冬氨酸和谷氨酸含量均高于澳湖和纯种湖羊 F1 代(P<0.05);陶湖 F1 代组氨酸含量显著高于纯种湖羊(P<0.05).6)饱和脂肪酸中,澳湖 F1 代、南湖 F1 代和陶湖 F1 代己酸、花生酸和木蜡酸含量显著低于湖羊,而癸酸含量显著提高(P<0.05).南湖 F1 代和陶湖 F1 代单不饱和脂肪酸含量较湖羊分别提高17.54%和 11.65%(P<0.05).陶湖 F1 代多不饱和脂肪酸总量高于湖羊 5.60%(P>0.05).陶湖和澳湖 F1 代反油酸含量显著高于湖羊(P<0.05).南湖 F1 代多不饱和脂肪酸总量显著低于湖羊(P<0.05).综上,通过杂交可以提高后代生长速度,改善产肉性能和肉质.相对而言,南湖 F1 代和陶湖 F1 代效果更佳.

To explore the differences in the growth and meat production performances and meat quality of different hybrid combinations.The study included 12 male lambs of Hu sheep(♂ Hu sheep×♀ Hu sheep,HH),AH F1(♂ Australian White sheep×♀ Hu Sheep,AH),NH F1(♂ Southdown sheep×♀ Hu sheep,NH),and TH F1(♂ Poll Dorset sheep×♀ Hu sheep,TH)aged 2 months old.A feeding test was started with the pre-feeding period of 10 days and a forward trial period of 60 days.After feeding,6 randomly selected animals were used for slaughter to determine slaughter performance and muscle quality.1)The average daily weight gains of NH F1 and TH F1 were significantly higher than those of Hu sheep(P<0.05).2)The live weights of AH F1 and NH F1 were significantly higher than those of Hu sheep(P<0.05).3)The marbling scores of AH F1,NH F1,and TH F1 were also significantly higher than those of Hu sheep(P<0.05).While the muscle shear force,cooked meat yield,cooking loss,brightness L*,and yellow degree b* were higher than those of Hu sheep,the differences were not significant(P>0.05).4)The crude fat content in AH F1 was significantly higher than that in Hu sheep,and the crude fat and dry matter contents in NH F1 were significantly higher than those in Hu sheep(P<0.05).5)The total and sweet amino acid content in the NH F1 were 15.76%and 17.83%,respectively,and they were higher than those of the F1 generation of purebred Hu sheep(P<0.05),respectively,while the content of umami amino acids in the NH F1 was significantly higher than that of the TH F1(P<0.05).The contents of serine,alanine,aspartic acid,and glutamic acid were also higher than those in the AH F1 and purebred Hu sheep(P<0.05),and that of histidine in the TH F1 was significantly higher than that of purebred Hu sheep(P<0.05).6)Among the saturated fatty acids,the contents of caproic acid,arachidic acid,and lignowaxic acid in the AH F1,NH F1,and TH F1 were significantly lower than those in Hu sheep,while that of capric acid was significantly higher(P<0.05).The monounsaturated fatty acid content in the NH F1 and TH F1 generations increased by 17.54%and 11.65%,respectively,relative to that of Hu sheep(P<0.05).The total content of polyunsaturated fatty acids in the TH F1 was 5.60%higher than that in Hu sheep(P>0.05).The amount of F1 reflux acid in TH and AH was significantly higher than that in Hu sheep(P<0.05).The total content of polyunsaturated fatty acids in the NH F1 was significantly lower than that in Hu sheep(P<0.05).In summary,the growth rate of offspring can be increased through crossbreeding,and meat production performance and meat quality can be improved.Comparatively,the NH F1 generation and the TH F1 generation have better results.
