基于主成分分析的山药营养品质综合评价OA

Comprehensive evaluation of nutritional quality of Chinese yam based on principal component analysis

本研究以14种优质山药种质为试验材料,测定其水分、灰分、蛋白质、淀粉、可溶性糖、直链淀粉、多糖、多酚8项营养品质指标,通过Pearson相关性分析与主成分分析法对各品种山药营养品质进行综合评价.结果表明,不同产地山药的各项营养指标均存在明显差异,各样品水分、灰分、蛋白质含量均值分别为75.8、5.2、11.95 g/100 g;淀粉、可溶性糖、直链淀粉平均含量分别为69.8%、4.13%、20.0%;多糖与多酚平均含量分别为1.30 g/100 g、1.29 mg/g,其中小白嘴和麻山药多糖含量整体表现优异.相关性分析显示,灰分与多酚、蛋白质与可溶性糖、多糖与直链淀粉呈负相关(P<0.05),蛋白质与直链淀粉呈负相关(P<0.01).主成分分析提取得到4个核心主成分,累计方差贡献率达81.337%,可有效表征山药营养品质的整体变异特征.综合评分显示,麻山药综合品质最优,长山药、小白嘴山药综合品质分别位列第二、三位.本研究为山药优良品种定向选育及规范化种植提供参考.

In this study,14 high quality Chinese yam germplasms were selected as test materials.8 nutritional quality indicators,including moisture,ash,protein,starch,soluble sugar,amylose,polysaccharide and polyphenol,were determined.Pearson correlation analysis and principal component analysis(PCA)were adopted to conduct a comprehensive evaluation on the nutritional quality of each yam cultivar.The results revealed significant differences in all nutritional indicators among yams from different origins.The average contents of moisture,ash and protein in the samples were 75.8,5.2 and 11.95 g/100 g,respectively;the average contents of starch,soluble sugar and amylose were 69.8%,4.13%and 20.0%,respectively;the average contents of polysaccharide and polyphenol were 1.30 g/100 g and 1.29 mg/g,respectively.Among all tested materials,Xiaobaizui yam and Mayam exhibited outstanding overall polysaccharide contents.Correlation analysis demonstrated that ash was significantly negatively correlated with polyphenol,protein was significantly negatively correlated with soluble sugar,and polysaccharide was significantly negatively correlated with amylose(P<0.05);protein showed an extremely significant negative correlation with amylose(P<0.01).4 principal components were extracted via principal component analysis,with a cumulative variance contribution rate of 81.337%,which could effectively reflect the overall variation characteristics of yam nutritional quality.According to the comprehensive scoring results,Mayam possessed the optimal comprehensive quality,followed by long Chinese yam and Xiaobaizui yam ranking the second and third respectively.This research provides theoretical references for targeted selective breeding and standardized cultivation of superior Chinese yam varieties.
