在全球人口持续增长、气候变化加剧及膳食结构深度转型的多重背景下,建立精准、可靠的蛋白质营养评价体系已成为保障全球粮食安全与促进公众健康的核心科学命题.由联合国粮食及农业组织(FAO)与国际原子能机构(IAEA)联合主导的"人类食品蛋白质和氨基酸回肠消化率数据库"建设项目,旨在构建全球首个标准化、可扩展、开放获取的蛋白质消化率核心数据平台,以系统解决可消化必需氨基酸评分(DIAAS)方法从理论走向实践所面临的关键数据瓶颈.本文梳理了该数据库的建设背景与发展历程,包括从2022年维也纳会议确立共识、2024年巴黎会议明确技术框架至2025年数据库工作持续推进的完整演进路径;阐述了数据库采纳的多层级方法学纳入标准(包括人体回肠造口术、双同位素示踪法等金标准方法,猪模型等最佳预测模型,以及经体内验证的体外消化模型);介绍了数据库的结构设计、核心变量体系(涵盖食品描述、蛋白质定量、氨基酸谱、真回肠消化率及DIAAS计算值等模块)及其严谨的质量控制框架.在此基础上,探讨了数据库在精准营养政策制定(如膳食指南修订、食品标签革新)、可持续膳食转型科学决策、新型蛋白质源开发与评价,以及填补中低收入国家蛋白质质量数据缺口等方面的重要应用前景.该数据库的建成与开放,将推动全球蛋白质营养评价进入一个由高质量数据驱动、全球协同创新和应用的新时代,为实现联合国可持续发展目标提供科学支撑.
In the context of global population growth,escalating climate change,and profound dietary transitions,establishing a precise and reliable protein nutrition evaluation system has become a central scientific imperative for ensuring global food security and promoting public health.The"Database on Ileal Digestibility of Protein and Amino Acids in Foods Consumed by Humans,"a flagship initiative jointly led by the Food and Agriculture Organization of the United Nations(FAO)and the International Atomic Energy Agency(IAEA),aims to construct the world's first standardized,scalable,and open-access core data platform for protein digestibility.This initiative is designed to systematically address the critical data bottlenecks preventing the digestible indispensable amino acid score(DIAAS)methodology from transitioning from theory to widespread practice.This article reviews the background and development process of the database,tracing the complete evolutionary pathway from consensus-building at the 2022 Vienna meeting,through the establishment of the technical framework at the 2024 Paris meeting,to the continuous advancement of database work in 2025.It elaborates on the multi-tiered methodological inclusion criteria adopted by the database(encompassing gold-standard methods such as human ileostomy and dual-isotope tracer techniques,the pig model as the best predictor,and in vitro digestion models validated against in vivo data).The article introduces the database structure,core variable systems(covering modules for food description,protein quantification,amino acid profiles,true ileal digestibility,and calculated DIAAS values),and its rigorous quality control framework.Furthermore,it explores the significant application prospects of the database in areas such as evidence-based nutrition policy formulation(e.g.,revising dietary guidelines,innovating food labeling),informed decision-making for sustainable dietary transitions,evaluation and development of novel protein sources,and filling critical protein quality data gaps in low-and middle-income countries.The completion and open access of this database will propel global protein nutrition evaluation into a new era driven by high-quality data,global collaborative innovation,and application,thereby providing scientific support for achieving the United Nations Sustainable Development Goals.
