膳食蛋白质是人体氮和必需氨基酸的核心来源,其营养质量与可持续供给直接关系国民健康与全球粮食安全.本文系统综述了食品蛋白质营养与可持续供给领域的研究进展,涵盖蛋白质与氨基酸的营养分类及生理功能、不同人群蛋白质与必需氨基酸的需要量标准、蛋白质品质评价方法的演进(从PDCAAS到DIAAS),以及FAO/IAEA全球蛋白质消化率数据库的建设进展.文章进一步分析了蛋白质供给的可持续性挑战,比较了动物源与植物源蛋白在健康结局与环境影响方面的差异,探讨了氨基酸限制在代谢调控与延缓衰老中的潜在应用价值.当前研究表明,不同年龄、生理状态及疾病条件下人群的氨基酸需要量存在显著差异,亟需建立中国人群的精准需要量数据库;以DIAAS为代表的现代评价体系虽在技术上更为科学,但仍未充分纳入蛋白质的健康结局与环境足迹;FAO/IAEA主导的全球食品蛋白质和氨基酸回肠消化率数据库有望为蛋白质质量标准化评价提供重要数据支撑.未来应着重推动以下方向:构建符合中国国情的必需氨基酸需要量标准与蛋白质品质评价体系;深化粮食蛋白质营养优势挖掘与膳食结构优化研究;发展基于体外动态模拟的高通量蛋白质质量评价技术;统筹营养健康、资源环境与经济社会目标,构建可持续蛋白质供给体系,助力健康中国与全球可持续发展目标的实现.

Dietary protein is the primary source of nitrogen and essential amino acids for the human body.Its nutritional quality and sustainable supply are directly related to public health and global food security.This review systematically summarizes research progress in food protein nutrition and sustainable supply,covering the nutritional classification and physiological functions of proteins and amino acids,protein and essential amino acid requirements across different populations,the evolution of protein quality evaluation methods(from PDCAAS to DIAAS),and the progress in the development of the FAO/IAEA global database on ileal digestibility of protein and amino acids in foods consumed by humans.The article further analyzes challenges in sustainable protein supply,compares the health outcomes and environmental impacts of animal-and plant-based proteins,and discusses the potential applications of amino acid restriction in metabolic regulation and healthy aging.Current studies indicate significant differences in amino acid requirements among populations of different ages,physiological conditions,and disease states,highlighting the urgent need to establish a precise requirements database for the Chinese population.Although modern evaluation systems such as DIAAS are more scientifically advanced,they have yet to fully incorporate health outcomes and environmental footprints.The FAO/IAEA global ileal digestibility database is expected to provide critical data support for standardized protein quality assessment.Future efforts should focus on:establishing an indispensable amino acids requirement standard and protein quality evaluation system tailored to China's national conditions;deepening research on the nutritional advantages of grain proteins and the optimization of dietary structures;developing high-throughput protein quality assessment technologies based on dynamic in vitro simulation;and integrating nutritional health,resource and environmental,and socio-economic objectives to build a sustainable protein supply system,thereby contributing to the realization of Healthy China and global sustainable development goals.
