三种沼虾肌肉营养成分差异研究OA

Comparative analysis of nutritional composition in the muscle tissue of three Macrobrachium prawn species

为了解罗氏沼虾(Macrobrachium rosenbergii)、海南沼虾(M.hainanense)和日本沼虾(M.nipponense)肌肉营养成分的差异,评估其营养价值并为资源差异化利用提供依据,本研究采集浙江省内养殖与天然水域样本,各品种每组20 尾,平行3 组,共60 尾,测定体质量、体长、出肉率并系统分析基本营养成分、氨基酸含量、脂肪酸组成及营养元素含量.结果显示,罗氏沼虾在体质量、体长及出肉率上均显著高于其他两种虾.基本营养成分方面,海南沼虾粗蛋白含量(20.81±0.46)%显著最高,日本沼虾水分含量(76.95±0.52)%显著最高,罗氏沼虾灰分含量(2.06±0.09)%显著最高.氨基酸分析显示,海南沼虾总氨基酸与必需氨基酸总量最高,且必需氨基酸占比最优(37.77%),罗氏沼虾蛋氨酸含量为(0.41±0.06)g/100 g,显著高于其他两种虾.脂肪酸组成上,日本沼虾与罗氏沼虾的多不饱和脂肪酸总量较高,而海南沼虾富含花生四烯酸.营养元素分析表明,罗氏沼虾钙、镁、铁含量显著较高,海南沼虾钾含量最高,日本沼虾钠含量最高.结果表明,三种沼虾营养组成各具特色,本研究为其营养价值评价与差异化利用提供科学依据.

This study collected samples from aquaculture and natural waters in Zhejiang Province(20 individu-als per species,3 replicates per group,total 60 individuals)to understand the differences in muscle nutritional composition among Macrobrachium rosenbergii,M.hainanense,and M.nipponense,evaluate their nutritional value,and provide a basis for differentiated utilization of resources.Body weight,body length,and meat yield were meas-ured,followed by systematic analyses of basic nutritional composition,mineral content,fatty acid profiles,and amino acid content.The results indicated that M.rosenbergii exhibited significantly greater body weight,body length,and meat yield compared to the other two species.Regarding basic nutritional components,M.hainanense had the highest crude protein content(20.81±0.46)%,whereas M.nipponense had the highest moisture content(76.95±0.52)%.M.rosenbergii showed a significantly higher ash content(2.06±0.09)%.Amino acid analysis revealed that M.hainanense possessed the highest total amino acid and total essential amino acid contents,along with the most favorable proportion of essential amino acids(37.77%).M.rosenbergii was notable for its higher methionine content[(0.41±0.06)g/100 g].In terms of fatty acid composition,M.nipponense and M.rosenbergii contained higher total polyunsaturated fatty acids,while M.hainanense was richer in arachidonic acid.Analysis of nutritional elements showed that M.rosenbergii had significantly higher levels of calcium,magnesium,and iron.M.hainanense contained the highest potassium level,and M.nipponense exhibited the highest sodium content.In conclusion,the three Macrobrachium prawn species exhibit distinct nutritional profiles.This research provides a scientific basis for evaluating their nutritional value and supports their differentiated utilisation.
