水产品氨基脲内外源性来源残留风险及检测鉴别技术研究OA
Study on the residue risk of endogenous and exogenous sources of semicarbazide in aquatic products and the detection and identification techniques
氨基脲(SEM)作为违禁兽药呋喃西林(Nitrofurazone,NFZ)的代谢标志物,因甲壳类水产品中内源性本底及加工诱导现象面临监管挑战.本文综述了 SEM 理化毒理特征,剖析了其外源性污染、内源性代谢及加工助剂反应等复杂来源.在系统梳理国内外水产品中 SEM 残留现状的基础上,结合暴露边缘值(MOE)法对其膳食摄入风险进行了综合评估.针对监管中亟待解决的"假阳性"难题,深入评述了区分内、外源性 SEM 的前沿鉴别技术,涵盖了化合物特异性氮稳定同位素分析(NSIRA)溯源技术、以 5-硝基-2-糠醛(5-nitro-2-furaldehyde)为代表的特异性结构标志物确证法,以及基于 HILIC 色谱的无衍生化/非水解快速检测新策略.最后,对构建多维度的 SEM 精准溯源体系及优化现行限量标准进行了总结与展望,旨在为平衡水产品质量安全与国际贸易顺畅提供科学依据.
Semicarbazide(SEM)serves as the metabolic marker for the banned veterinary drug nitrofurazone(NFZ)in aquatic product safety regulation.However,the presence of endogenous background levels in crusta-ceans and formation induced by processing pose significant challenges for regulatory determination.The physi-cochemical properties and toxicological characteristics of SEM were systematically reviewed,alongside an eluci-dation of the complex sources in aquatic products.Formation pathways were analysed,covering exogenous con-ditions such as water pollution and illegal drug use,endogenous mechanisms involving crustacean metabolism,and reactions with disinfectants or additives during processing.Based on a comprehensive survey of SEM resi-due status,dietary intake risks were evaluated using the Margin of Exposure(MOE)approach.To address the"false positive"regulatory dilemma,advanced technologies for differentiating endogenous from exogenous SEM were critically evaluated,including source tracing via Compound-Specific Nitrogen Stable Isotope Ratio Analysis(NSIRA),confirmation using the specific structural marker 5-nitro-2-furaldehyde,and novel non-derivatisati-on/non-hydrolysis detection strategies based on Hydrophilic Interaction Liquid Chromatography(HILIC).Fi-nally,perspectives on constructing a multi-dimensional precision traceability system and optimising current limit standards are proposed to provide a scientific basis for balancing aquatic product safety and international trade facilitation.
