采收期对寒红梨不同低温处理后冷藏期和货架期品质的影响OA
Effects of harvest period on the quality of'Hanhong'pears during cold storage and shelf life following different low-temperature treatments
为明确寒红梨果实长期冷藏的适宜采收期及贮藏温度,以不同采收期(9月18日、9月25日、10月2日)的寒红梨果实为试材,研究其在不同低温处理[(-1±0.5)、(0±0.5)、(2±0.5)℃]条件下,果实冷藏和货架期间品质与生理指标的变化规律.结果表明,随着采收期的延迟,寒红梨果实在低温贮藏30、60、150 d时的可溶性固形物含量均呈逐渐上升的趋势,乙烯释放速率和呼吸强度均逐渐增强,而果肉硬度及可滴定酸含量则逐渐降低.其中,采收期Ⅱ(9月25日)的果实在低温处理后果实品质表现最佳,其在货架7d时的乙烯释放速率、呼吸强度及果肉硬度波动幅度最小,能够在整个冷藏期及货架期维持较好的果实品质.在不同低温处理中,(0±0.5)℃处理显著抑制了各采收期果实的乙烯释放速率与呼吸强度,延缓了果肉硬度的下降,并有效减缓可溶性固形物含量的上升与可滴定酸含量的下降.综合各项研究结果,在吉林省长春市公主岭市产区,寒红梨适宜长期冷藏的采收标准为:9月底采收,果实可溶性固形物含量在11.5%以上,果肉硬度不低于5 kg/cm2.
To determine the suitable harvest period and storage temperature for long-term cold storage of'Hanhong'pear fruits,'Hanhong'pear fruits from different harvest periods(September 18th,September 25th,and October 2nd)were used as test materials.The changing rules of fruit quality and physiological indicators during cold storage and shelf life under different low-temperature treatments[(-1±0.5)℃,(0±0.5)℃,(2±0.5)℃]were studied.The results showed that with the delay of the harvest period,the soluble solid content of'Hanhong'pear fruits gradually increased at 30 days,60 days,and 150 days of low-temperature storage.The ethylene release rate and respiration intensity gradually increased,while the pulp firmness and titratable acid content gradually decreased.Among them,the fruits from harvest period Ⅱ(September 25th)showed the best fruit quality after low-temperature treatment.The fluctuations of ethylene release rate,respiration intensity,and pulp firmness were the smallest after 7 days on the shelf,and good fruit quality could be maintained throughout the cold storage and shelf life.Among different low-temperature treatments,the(0±0.5)℃ treatment significantly inhibited the ethylene release rate and respiration intensity of fruits from each harvest period,delayed the decrease of pulp firmness,and effectively slowed down the increase of soluble solid content and the decrease of titratable acid content.Based on the comprehensive research results,in the Gongzhuling City production area of Changchun City,Jilin Province,the suitable harvest standard for long-term cold storage of'Hanhong'pears is to harvest at the end of September,with the soluble solid content of the fruits above 11.5%and the pulp firmness not less than 5 kg/cm2.
