栀子天然色素作为一种广泛应用的安全性天然色素,光不稳定性严重制约了产品的货架期与感官品质,是产业化应用亟待解决的关键问题.本文综述了栀子天然色素的光降解机制,论述提升其光稳定性的主流改性策略,包括构建微胶囊与多孔载体吸附与分子包合技术、分子结构修饰及添加光稳定剂的化学改性方法,以及基于酶法和代谢调控的生物改性手段,并展望了栀子天然色素的光稳定性改性策略,希望为开发高稳定性栀子色素制剂提供参考.

As a widely used and safe natural pigment,the light instability of gardenia natural pigment seri-ously restricts the shelf life and sensory quality of products,which is a key problem to be solved urgently in in-dustrial application.This paper reviews the photodegradation mechanism of gardenia natural pigment,and dis-cusses the mainstream modification strategies to improve its light stability,including microcapsule construc-tion,porous carrier adsorption and molecular inclusion technology,chemical modification methods such as mo-lecular structure modification and addition of light stabilizers,as well as biological modification methods based on enzymatic methods and metabolic regulation.The modification strategies for light stability of gardenia natu-ral pigment are also prospected,hoping to provide a reference for the development of high-stability gardenia pigment preparations.
