文章旨在研究葛根素对西门塔尔牛生产性能、肉品质和血清抗氧化能力的影响.试验将 48 头健康状况良好、无疾病、初始体重为(380.25±15.28)kg 的西门塔尔公牛作为试验对象,采用单因素随机试验设计,根据初始体重相近原则将其随机分为 4 组,每组 3 个重复,每个重复 4 头牛.对照组仅饲喂基础日粮,不添加葛根素;3 个试验组分别为 P 0.02 组饲喂基础日粮+0.02%葛根素;P 0.04 组饲喂基础日粮+0.04%葛根素;P 0.06 组饲喂基础日粮+0.06%葛根素.预试期 15 d,正试期 75 d.试验结果显示,与对照组相比:1)P 0.04 组与 P 0.06 组西门塔尔牛末重分别显著提高 4.15%和 4.36%(P<0.05)、平均日增重(ADG)分别升高 14.01%和 15.92%、料肉比(F/G)分别显著下降 11.46%和 12.73%(P<0.05);2)P 0.04 组和 P 0.06 组肌肉剪切力分别显著降低 15.01%和 15.67%(P<0.05);大理石花纹评分随葛根素添加量增加呈上升趋势,P 0.04 组和 P 0.06 组评分显著升高(P<0.05);肉色指标中,P 0.04 组和 P 0.06 组 a* 值显著升高(P<0.05);3)P 0.04 组和 P 0.06 组血清超氧化物歧化酶(SOD)含量分别提高 21.76%和 23.35%、总抗氧化能力(T-AOC)含量分别显著提高 29.98%和 27.79%(P<0.05);P 0.02 组、P 0.04组和 P 0.06 组丙二醛(MDA)含量显著降低(P<0.05),且 P 0.04 组降幅最大,降低 28.85%.综上所述,日粮中添加葛根素可提高西门塔尔牛的生长性能,改善肉品质,增强机体抗氧化能力,本试验条件下西门塔尔牛日粮中葛根素的适宜添加量为 0.04%.

This study aimed to analyze the effects of puerarin on the production performance,meat quality,and serum antioxidant capacity of Simmental cattle.Forty-eight healthy,disease-free Simmental bulls with an initial body weight of(380.25±15.28)kg were selected as test subjects.A single-factor randomized design was used,and the bulls were randomly assigned to four treatment groups based on similar initial body weights,with three replicates per group and four bulls per replicate.The control group was fed only the basal diet without puerarin;the three experimental groups were:P 0.02 group fed the basal diet with 0.02%puerarin;P 0.04 group fed the basal diet with 0.04%puerarin;P 0.06 group fed the basal diet with 0.06%puerarin.The pre-trial period lasted 15 days,and the formal trial period lasted 75 days.The results showed that compared with the control group:1)the final body weights of the P 0.04 and P 0.06 groups increased by 4.15%and 4.36%(P<0.05),respectively;average daily gain(ADG)increased by 14.01%and 15.92%,and feed/gain ratio(F/G)decreased by 11.46%and 12.73%(P<0.05);2)muscle shear force decreased by 15.01%and 15.67%(P<0.05)in the P 0.04 and P 0.06 groups,respectively;marbling scores showed an increasing trend with puerarin addition,and the scores of the P 0.04 and P 0.06 groups increased significantly(P<0.05);among meat color indices,the a* values of the P 0.04 and P 0.06 groups increased significantly(P<0.05);3)serum SOD content increased by 21.76%and 23.35%,and T-AOC content increased by 29.98%and 27.79%in the P 0.04 and P 0.06 groups(P<0.05);MDA content decreased significantly in the P 0.02,P 0.04,and P 0.06 groups(P<0.05),with the largest decrease of 28.85%in the P 0.04 group.In conclusion,adding puerarin to the diet can improve the growth performance of Simmental cattle,enhance meat quality,and increase antioxidant capacity.Under the conditions of this experiment,the suitable amount of puerarin in the diet of Simmental cattle is 0.04%.
