随着食品质量与安全问题日益受到全球关注,开发高效、精准的检测技术对保障消费者健康和促进农业高质量发展具有重要意义.电化学分析技术通过纳米材料修饰、生物识别元件集成和信号放大策略的创新,在食品质量安全检测中展现出显著优势.系统综述了电化学分析技术的基本原理与常用方法,重点探讨了该技术在粮油与果蔬质量安全检测中的研究进展与应用现状,分析了其在污染物高灵敏检测、营养成分分析及品质无损评估方面的显著优势.同时,探讨了当前电化学分析技术在实际应用中面临的主要挑战,如复杂基质干扰、传感器稳定性与标准化等问题,并对其未来发展方向进行了展望,以期为电化学分析技术在食品检测领域的进一步研究与应用提供理论参考.

With the increasing global attention to food quality and safety issues,the development of efficient and accurate detection technologies is of significant importance for safeguarding consumer health and promoting high-quality agricultural development.Recently,electrochemical analysis technology has demonstrated remarkable advantages in food quality and safety detection through innovations in nanomaterial modification,biorecognition element integration and signal amplification strategies.The fundamental principles and common methods of electrochemical analysis were systematically summarized,with a focus on its recent research progress and applications in quality and safety detection for grains,oils,fruits and vegetables.The technology's prominent capabilities in highly sensitive detection of contaminants,analysis of nutritional components,and non-destructive quality evaluation were highlighted.Major challenges in practical applications were also discussed,including interference from complex matrices,sensor stability and standardization issues.Future development directions were outlined to provide a theoretical reference for further research and practical implementation of electrochemical analysis in food detection.
