目的 以荷花花粉为主要原料,开发一种具有降脂与抗氧化功能的药食同源花粉复合养生膏,并探讨该产品的品质、基本成分、矿物质、主要活性成分及功能特性.方法 试验采用地衣芽孢杆菌对荷花花粉进行固态发酵破壁预处理,与蜂蜜、蜂王浆、金钗石斛叶汁、刺梨汁等原料复配,经均质、低温真空杀菌等工艺制成花粉复合养生膏,随后测定其基本成分,并通过小鼠饲喂实验评估该产品对血脂代谢及机体抗氧化能力的影响.结果 花粉复合养生膏微生物指标符合国家标准,且富含黄酮、多酚及多种氨基酸;与对照组相比,花粉复合养生膏能显著降低各实验组小鼠血清肌酐(Cr)及甘油三酯(TG)水平(P<0.05),并表现出提高血清中高密度脂蛋白胆固醇(HDL-C)水平的趋势(P>0.05);同时显著提升总抗氧化能力(T-AOC)(P<0.05),降低丙二醛(MDA)含量(P<0.05).结论 花粉复合养生膏具有调节血脂和增强机体抗氧化功能,为荷花花粉及其相关特色农产品的高值化开发提供了科学依据.

Objective To develop a food-medicine homologous Compound Pollen Health Paste with lipid-lowering and antioxidant functions using lotus pollen as the main raw material,and to investigate the quality,basic components,minerals,main active ingredients,and functional properties of the product.Methods Lotus pollen was pretreated by solid-state fermentation with Bacillus licheniformis to disrupt cell walls,and then compounded with honey,royal jelly,juice of Dendrobium nobile leaves,and juice of Rosa roxburghii fruit.The mixture was homogenized and processed by low-temperature vacuum sterilization to obtain the compound paste.Subsequently,its basic components were determined,and the effects of the product on blood lipid metabolism and antioxidant capacity were evaluated through mouse feeding experiments.Results The microbial indicators of the Compound Pollen Health Paste complied with national standards,and it was rich in flavonoids,polyphenols,and various amino acids.Compared with the control group,the compound paste significantly reduced serum creatinine(Cr)and triglyceride(TG)levels in all experimental groups(P<0.05),and showed a trend toward increasing high-density lipoprotein cholesterol(HDL-C)levels(P>0.05).It also significantly enhanced total antioxidant capacity(T-AOC)(P<0.05)and decreased malondialdehyde(MDA)content(P<0.05).Conclusion The Compound Pollen Health Paste exhibits lipid-regulating and antioxidant functions,providing a scientific basis for the high-value utilization of lotus pollen and related characteristic agricultural products.
