基于碱中和可得然胶与肌原纤维蛋白的高内相乳液构建及其在食品3D打印中的应用OA
Construction of high internal phase emulsions based on alkali-neutralized curdlan/myofibrillar protein and their application in food 3D printing
食品3D打印可以按需调整食品的营养配比、形状和质地,在食品个性化定制领域具有良好的应用前景.肉蛋白,如肌原纤维蛋白(Myofibrillar Protein,MP)因其独特的营养与功能特性,成为食品3D打印的关键基质材料.然而,MP因自身支撑力不足等缺陷限制了其在食品3D打印中的应用.高内相乳液(High Internal Phase Emulsions,HIPEs)具有独特的剪切稀化行为、屈服应力特性及热力学稳定性,使其在食品3D打印中展现出重要的应用价值.本研究以MP与可得然胶(Curdlan,CL)为乳化剂,构建MP-CL的HIPEs体系,探究不同碱中和(Alkali Neutralization,AN)处理CL对MP-HIPEs乳液特性及食品3D打印性能的影响.通过分析HIPEs的视觉外观、液滴尺寸、稳定性、流变特性及食品3D打印精度,评估其打印性能.结果显示,添加CL可减小MP-HIPEs粒径,提升稳定性、流变特性与打印性能;其中CL(AN)0.28组的MP-HIPEs稳定性最佳,打印精度最高(96.92%).本研究结果可为基于动物源蛋白的HIPEs制备及其在个性化3D打印食品开发中的应用提供参考.
Food 3D printing enables on-demand adjustment of the nutritional ratio,shape,and texture of food,exhibiting promising application prospects in the field of personalized food customization.Meat proteins,for example,myofibrillar protein(MP),have become key ma-trix materials for food 3D printing due to their unique nutritional and functional properties.However,the application of MP in food 3D printing is limited by its inherent drawbacks such as insufficient supporting capacity.High internal phase emulsions(HIPEs)demonstrate sig-nificant application value in food 3D printing,attributed to their unique shear-thinning behav-ior,yield stress characteristics,and thermodynamic stability.In this study,MP and curdlan(CL)were used as emulsifiers to construct an MP-CL HIPEs system.The effects of CL trea-ted with different degrees of alkali neutralization(AN)on the emulsion properties and food 3D printing performance of MP-HIPEs were investigated.The printability of HIPEs was e-valuated by analyzing their visual appearance,droplet size,stability,rheological properties,and food 3D printing precision.Results showed that the addition of CL could reduce the parti-cle size of MP-HIPEs and improve their stability,rheological properties,and 3D printability.Among all groups,the MP-HIPEs with CL(AN)0.28 had the best stability and the highest printing precision(96.92%).This study provides a reference for the preparation of HIPEs based on animal-derived proteins and their application in the development of personalized 3D-printed foods.
