水化脱胶对冷榨核桃油品质的影响OA
The effect of hydration degumming on the quality of cold-pressed walnut oil
我国核桃种植面积与产量居世界首位,核桃油中不饱和脂肪酸含量在90%以上且富含丰富的脂类伴随物.冷榨工艺可最大程度的保留核桃油的营养成分,但冷榨核桃油中的胶质(磷脂)会影响核桃油的稳定性和品质.水化脱胶是去除毛油中胶质的简单有效方法,但水化脱胶对毛油品质的影响尚不明晰.本研究旨在揭示水化脱胶对冷榨核桃油理化特性、脂肪酸种类、甘油酯组成、甘油三酯组成、脂类伴随物保留及脂类风险因子生成的影响.结果显示,脱胶后核桃油的酸价由0.32 mg KOH/g升高至0.45 mg KOH/g,过氧化值由0.061 g/100 g升高至0.068 g/100 g;水化脱胶前后不饱和脂肪酸占比分别为91.99%,89.39%,其变化不显著(P>0.05);甘油酯各组分的含量基本不变,且甘油三酯的分子种类基本一致,且研究发现甘油三酯的sn-2位主要以油酸与亚油酸为主,其占比为86.27%;部分脂类伴随物少量流失,维生素E(以α-生育酚当量计)由5.4 mg α-TE/100 g降低至3.45 mg α-TE/100 g(保留率为63.89%);β-谷甾醇总量由1 251.7 mg/kg降低至1 055.1 mg/kg(保留率为84.29%);水化脱胶前后角鲨烯均未检出;两种塑化剂邻苯二甲酸二正丁酯与邻苯二甲酸二(2-乙基己基)酯均未检出;3-氯丙醇酯与缩水甘油酯分别由0.30 mg/kg与0.16 mg/kg降低为0.29 mg/kg与0.15 mg/kg.研究表明,水化脱胶过程会引起酸价与过氧化值的略微上升,对脂肪酸的组成以及甘油酯的组成影响没有显著差异(P>0.05),但是会引起维生素E以及β-谷甾醇的损失,同时会带走部分脂类风险因子.本研究为高品质冷榨核桃油的生产提供了理论支撑.
China has the largest area of walnut cultivation and the highest production in the world.The unsaturated fatty acid content in walnut oil is over 90%,and it is rich in lipid-as-sociated substances.Cold pressing can retain the nutritional components of walnut oil to the greatest extent,but the phospholipids in cold-pressed walnut oil can affect its stability and quality.Hydration degumming is a simple and effective method to remove phospholipids from crude oil,but the impact of hydration degumming on the retention of lipid-associated sub-stances and the generation of lipid risk factors in crude oil is still unclear.This study aims to reveal the effects of hydration degumming on the physicochemical properties,fatty acid com-position,glyceride composition,triglyceride composition,retention of lipid-associated sub-stances and generation of lipid risk factors in cold-pressed walnut oil.The results showed that the acid value of walnut oil increased from 0.32 mg KOH/g to 0.45 mg KOH/g after degumming,and the peroxide value increased from 0.061 g/100 g to 0.068 g/100 g.The pro-portion of unsaturated fatty acids before and after hydration degumming was 91.99%and 89.39%,respectively,with no significant difference(P>0.05).The content of each compo-nent of glycerides remained basically unchanged,and the molecular types of triglycerides were basically the same.The study found that oleic acid and linoleic acid were the main com-ponents at the sn-2 position of triglycerides,accounting for 86.27%.Some lipid-associated substances were lost in small amounts,with vitamin E(expressed as α-tocopherol equiva-lents)decreasing from 5.4 mg α-TE/100 g to 3.45 mg α-TE/100 g(retention rate of 63.89%),and β-sitosterol decreasing from 1 251.7 mg/kg to 1 055.1 mg/kg(retention rate of 84.29%).Squalene was not detected before and after hydration degumming.Two plasticizers,di butyl phthalate and di(2-ethylhexyl)phthalate,were not detected.3-monochloropropane-1,2-diol esters and glycidyl esters decreased from 0.30 mg/kg and 0.16 mg/kg to 0.29 mg/kg and 0.15 mg/kg,respectively.The study shows that hydration degumming can cause a slight increase in acid value and peroxide value,with no significant difference in the composition of fatty acids and glycerides(P>0.05),but it can cause the loss of vitamin E and β-sitosterol,and remove some lipid risk factors.This study provides theoretical support for the production of high-quality cold-pressed walnut oil.
