为探究复合益生菌对肉鸡生长性能、屠宰性能及肉品质的影响,本试验采用完全随机试验设计,选取240 只 1 日龄健康罗斯 308 雏鸡,随机分为 2 组,每组 3 个重复,每个重复 40 只鸡;对照组饲喂基础日粮,试验组在基础日粮中添加 1.0 g/kg复合益生菌,试验期共 42 d.结果显示:试验组肉鸡平均日增重较对照组显著提高 12.5%(P<0.05),料重比显著降低 8.4%(P<0.05),死亡率显著降低 1.1%(P<0.05);平均胴体重、屠宰率、出肉率分别较对照组显著提高 9.8%、3.3%、3.2%(P<0.05),剔除率与内脏重量占比无显著差异;肉色光泽度评分、嫩度评分分别显著提高(P<0.05),24 h脱水率显著降低(P<0.05),肌肉脂肪含量显著降低(P<0.05);脂肪酸组成显著优化,饱和脂肪酸含量降低 14.9%,单不饱和脂肪酸含量提高 11.1%,多不饱和脂肪酸含量提高 4.2%(P<0.05).综上,日粮添加 1.0 g/kg复合益生菌可显著提升肉鸡生长性能、改善屠宰性能、优化肉品质.

To investigate the effects of compound probiotics on growth performance,slaughter performance and meat quality of broilers,a completely randomized design was employed in this trial.A total of 240 healthy 1-day-old Ross 308 broiler chicks were randomly allocated to 2 groups,with 3 replicates per group and 40 birds per repli-cate.The control group was fed a basal diet,while the experimental group was fed the basal diet supplemented with 1.0 g/kg compound probiotics.The experimental period lasted 42 days.The results showed that compared with the control group,broilers in the experimental group exhibited a 12.5%significant increase in average daily gain(P<0.05),an 8.4%significant reduction in feed to gain ratio(P<0.05),and a 1.1%significant decrease in mortality(P<0.05).Av-erage carcass weight,dressing percentage and meat yield were significantly elevated by 9.8%,3.3%and 3.2%,respec-tively(P<0.05),whereas no significant differences were observed in culling rate and the relative weight of visceral or-gans.The meat color luster score and tenderness score were significantly increased(P<0.05);the 24-h dehydration rate was significantly decreased(P<0.05);and intramuscular fat content was significantly reduced(P<0.05).The fatty acid profile was significantly optimized:saturated fatty acid content decreased by 14.9%,while monounsaturated fatty acid and polyunsaturated fatty acid contents increased by 11.1%and 4.2%,respectively(P<0.05).In summary,dietary sup-plementation with 1.0 g/kg compound probiotics can significantly improve growth performance,enhance slaughter per-formance and optimize meat quality in broilers.
