[目的]探究不同品质武夷岩茶肉桂的挥发性成分特征及其香气差异的物质基础,为武夷岩茶品质评价提供依据.[方法]以优质清香型(QX-A)、中等清香型(QX-B)、中等浓香型(NX-B)及次等浓香型(NX-C)4 种品质武夷肉桂为试材,采用 HS-SPME-GC-MS 检测其挥发性成分,并结合主成分分析(PCA)与正交偏最小二乘判别分析(OPLS-DA)筛选关键呈香物质.[结果]4 种茶样共鉴定出 40 种挥发性成分,其中酯类和醇类含量最高,主要成分为橙花叔醇、二氢芳樟醇、己酸己酯、吲哚、苯乙腈、α-法尼烯及 β-紫罗酮.不同品质武夷肉桂挥发性成分总含量差异显著,大小依次为:QX-A>QX-B>NX-B>NX-C,且清香型(QX-A、QX-B)茶样挥发性成分总含量高于浓香型(NX-B、NX-C).PCA 与 OPLS-DA 可有效区分各品质组,共筛选出 10 种差异显著的呈香成分(VIP>1、P<0.05).[结论]橙花叔醇、二氢芳樟醇、己酸己酯等 10 种成分是武夷肉桂品质差异的关键物质基础;清香型肉桂挥发性成分总含量及香叶醇、二氢芳樟醇、α-法尼烯等花香型物质含量显著高于浓香型.

[Purpose]This study explored the volatile component characteristics and material basis of aroma differences in Wuyi rock tea Rougui with different qualities,aiming to provide a basis for quality evaluation of Wuyi rock tea.[Method]Rougui sam-ples with four qualities—high-quality light-fragrance type(QX-A),medium-quality light-fragrance type(QX-B),medium-quality strong-fragrance type(NX-B),and inferior-quality strong-fragrance type(NX-C)—were used as materials.Volatile components were detected by headspace solid-phase microextraction-gas chromatography-mass spectrometry(HS-SPME-GC-MS),and key aro-ma compounds were screened by principal component analysis(PCA)combined with orthogonal partial least squares-discriminant a-nalysis(OPLS-DA).[Result]A total of 40 volatile components were identified in the four samples,among which esters and alco-hols had the highest content.The main components were nerolidol,dihydrolinalool,hexyl hexanoate,indole,benzyl cyanide,α-far-nesene,and β-ionone.The total content of volatile components was significantly different,following the order of QX-A>QX-B>NX-B>NX-C.The total content of volatile components in light-fragrance types was higher than that in strong-fragrance types.PCA and OPLS-DA effectively distinguished different quality groups,and 10 significantly different aroma components(VIP>1,P<0.05)were screened out.[Conclusion]Ten components including nerolidol,dihydrolinalool,and hexyl hexanoate are the key material basis for quality differences of Wuyi rock tea Rougui.The total content of volatile components and the content of floral substances such as geraniol,dihydrolinalool,and α-farnesene in light-fragrance types are significantly higher than those in strong-fragrance types.
