影响畜禽肉品质的要素有很多,如品种、年龄、生长环境以及营养等.矿物质和维生素是重要的营养物质,对肉品质影响最为直观,但由于技术开发不成熟与利用不合理等问题,易造成环境污染、肉品质下降以及生产浪费,明确矿物质与维生素对肉品质的调控机制,对提升肉品质具有重要作用.因此,本文基于近几年最新研究,揭示和总结矿物质与维生素对畜禽肉品质的调控机制,为进一步生产优质肉产品提供有力支撑.

There are many factors affecting the meat quality of livestock and poultry,such as breed,age,growing environment and nutrition,et al.Minerals and vitamins are crucial nutrients that exert the most direct influence on meat quality.However,due to immature technological development and improper utilization,they can easily cause environmental pollution,declining meat quality,and production waste.Clarifying the regulatory mechanisms of minerals and vitamins on meat quality is vital for enhancing meat quality.Therefore,based on the latest researches in recent years,this paper reveals and summarizes the regulatory mechanisms of minerals and vitamins on the meat quality of livestock and poultry to provide strong support for the further production of high-quality meat products.
