海拔高度对毛竹春笋外观特征及营养品质的影响OA
Effect of Altitudes on Appearance and Nutritional Quality of Spring Moso Bamboo Shoots
以福建省漳平市官田乡不同海拔(250、450、650、800 m)毛竹春笋为对象,分析了海拔对其外观特征(笋基径、长度、单笋质量、可食用率)、营养成分含量(蛋白质、维生素 C、可溶性糖、淀粉、脂肪)及食味品质指标(单宁、草酸、纤维素及木质素)的影响.结果表明,毛竹春笋各外观指标在不同海拔下呈现出不同的变化规律但差异并不显著,海拔450 m 处的竹笋外观品质较好,650 m 处的竹笋可食用率最高且显著高于其他海拔的(P<0.05).海拔高度对毛竹春笋营养成分含量及食味品质影响较大,高海拔(650~800 m)利于多数营养物质积累,蛋白质、维生素 C、淀粉在中高海拔显著富集;可溶性糖在低海拔(250 m)处含量最高,随海拔升高逐步降低;脂肪在中低海拔(450 m)处含量最高,高海拔(800 m)处最低.高海拔(650~800 m)显著降低春笋的纤维素、木质素含量,改善口感;海拔650 m 处草酸含量最低,单宁含量中等,整体食味协调性最佳.研究结果可为毛竹春笋优质产区的划分、定向栽培技术优化提供参考.
Taking spring shoots of moso bamboo from Guantian township,Zhangping city,Fujian province,at different altitudes(250,450,650,and 800 m)as the research objects,this study analyzes the effects of altitude on their appearance characteristics(shoot base diameter,length,single shoot weight,and edible rate),nutritional component contents(protein,vitamin C,soluble sugar,starch,and fat),and taste quality indicators(tannin,oxalic acid,cellulose,and lignin).The results show that all appearance indicators of moso bamboo spring shoots present different variation patterns across altitudes,but the differences are not pronounced.The spring shoots at an altitude of 450 m have superior appearance quality,while those at 650 m altitude have the highest edible rate,which is significantly higher than that at other altitudes(P<0.05).Altitude has a dominant impact on the nutritional component contents and taste quality of moso bamboo spring shoots.High altitudes(650-800 m)are conducive to the accumulation of most nutrients,while protein,vitamin C,and starch are significantly higher at medium and high altitudes.The soluble sugar content is the highest at low altitude(250 m)and gradually decreases with increasing altitude.The fat content peaks at medium-low altitude(450 m)and reaches the lowest at high altitude(800 m).High altitudes(650-800 m)significantly reduces the contents of cellulose and lignin in spring shoots,thereby improving their taste.The spring shoots at 650 m altitude have the lowest oxalic acid content and medium tannin content,exhibiting the optimal balanced taste.This study could provide a reference for the division of quality production areas of spring moso bamboo shoots and the optimization of their oriented cultivation techniques.
