为探究筇竹属竹笋的营养品质差异,筛选优质笋用竹种,以筇竹、大叶筇竹、细秆筇竹和三月竹竹笋为试验材料,测定36 项营养指标,采用相关性分析、主成分分析结合隶属函数法对其品质进行综合评价.结果表明:筇竹笋的综合品质优势最为显著,营养成分均衡,矿质元素与氨基酸含量丰富,且在膳食纤维、总糖、总黄酮含量及必需氨基酸占总氨基酸比值(EAA/TAA)方面表现突出;大叶筇竹竹笋品质次之,各营养成分含量与筇竹相近,且在 Mg、Se、Zn、Cu 矿质元素及呈味氨基酸含量上具有明显优势;三月竹笋的营养价值在 4 个竹种中最低.研究认为,筇竹笋适用于高营养品质、口感脆甜方向的产业化开发,尤其适合研发高膳食纤维、天然抗氧化型健康食品;大叶筇竹笋则适宜在高端鲜食、特色风味食品、健康轻食等领域的研发利用.研究结果可为筇竹属优质笋用竹种筛选及高价值竹笋产品开发提供理论参考.

In order to explore the differences in nutritional quality of Qiongzhuea shoots and screen quality bamboo species,the shoots of Q.tumidinoda,Q.macrophylla,Q.intermedia and Q.opienensis are used as experimental materials to determine 36 nutritional indexes.The quality is comprehensively evaluated using correlation analysis,principal component analysis and membership function method.The results show that Q.tumidinoda shoots have the most significant advantage in comprehensive quality,with balanced nutrients,rich mineral elements and amino acids,and outstanding performance in dietary fiber,total sugar,total flavonoids and the ratio of essential amino acids to total amino acids(EAA/TAA).Q.macrophylla shoots'quality is only next to Q.tumidinoda shoots,with similar content of nutrients with Q.tumidinoda shoots,and it has obvious advantages in the contents of Mg,Se,Zn,Cu and flavor amino acids.The nutritional value of Q.opienensis shoots is the lowest among the four bamboo species.The results show that Q.tumidinoda shoots are suitable for especially for the industrialized development of natural antioxidant healthy food with high dietary fiber,which is characterized with high nutritional quality and crisp and sweet taste.Q.macrophylla shoots are suitable for research and development of high-end fresh food,specialty flavor food and healthy light food.The research results could provide a theoretical reference for the screening of quality bamboo shoot species and the development of high-value bamboo shoot products.
