4种加工方式的筇竹笋贮藏过程中营养成分变化OA
Changes in Nutritional Composition of Qiongzhuea tumidinoda Shoots Processed by Four Different Methods During Storage Process
以4 种不同加工方法(M1、M2、M3、M4)处理的筇竹笋为试验材料,分析其在贮藏120 d 期间竹笋可食率及蛋白质、膳食纤维、总糖、主要矿质元素含量等指标的变化.结果表明:对于笋可食率,不同加工方法间及在贮藏的不同阶段间均不存在显著性差异,最低为 99.48%;对于笋蛋白质含量,M4 处理总体高于 M1、M2、M3 处理,M2 处理随贮藏时间延长呈略微降低的变化趋势,M1、M3 处理无明显的变化规律;对于笋总糖含量,M2、M3 处理随着贮藏时间的延长呈逐渐降低的变化趋势;对于笋膳食纤维含量,M4 处理总体高于 M1、M2、M3 处理,而后三者的含量较为接近;对于笋钙含量,M4 处理的平均值为954.63mg/kg,分别为 M1、M2、M3 的3.36、3.28、3.0 倍;对于笋钾含量,M4 处理仅为 M1、M2、M 处理的1/10 左右;对于锰和镁含量,M1、M2、M3 处理的较为接近,且在不同贮藏时间点变化不明显,M4 处理的则随贮藏时间延长而呈升高的趋势;对于锌含量,M4 处理的明显高于 M1、M2、M3 处理.M1、M2、M3 处理筇竹笋钾含量较高,M4 处理钙、锌含量较高.研究结果可为不同竹笋饮食需求下的加工工艺,提供营养价值层面的科学依据.
Qiongzhuea tumidinoda shoots treated with four different processing methods(M1,M2,M3,M4)are used as experimental materials to analyze changes in their edible rate,protein content,dietary fiber content,total sugar content,and main mineral element content during the 120 d storage period.The results show that there are no significant differences in edible rate among different processing methods at different storage stages,with the lowest at 99.48%.The protein content with M4 is overall higher than that with M1,M2,and M3,while the protein content with M2 shows a slight decreasing trend as the storage time prolongs,and there is no obvious change pattern with M1 and M3.The total sugar content with M2 and M3 shows a decreasing trend as the storage time extends.The dietary fiber content with M4 is overall higher than that with M1,M2,and M3,and the dietary fiber contents with the latter three methods are similar.The average calcium content with M4 is 954.63 mg/kg,which is 3.36,3.28,and 3.0 times higher than that of M1,M2,and M3,respectively.However,the potassium content with M4 is only about one-tenth of that with M1,M2,and M3.The manganese and magnesium contents with M1,M2,and M3 are similar and show no significant changes at different storage time points,while their content with M4 shows an increasing trend as the storage time prolongs.The zinc content with M4 is significantly higher than that with M1,M2,and M3.The Q.tumidinoda shoots treated with M1,M2,and M3 exhibit higher potassium content,while the shoots treated with M4 have higher calcium and zinc contents.These findings would provide a scientific basis in terms of nutritional value for processing technologies under different dietary needs for bamboo shoots.
