饲养方式对城口山地鸡肌肉品质与血液生理生化指标的影响研究OA
Impact of rearing systems on meat quality and hemato-biochemical parameters in Chengkou mountain chickens
该试验以 200 只 120 日龄的城口山地鸡为研究对象,划分为笼养和散养两组,比较分析其胸肌的肉品质和血液生理生化指标的差异与联系.结果表明,散养组城口山地鸡红细胞数、血红蛋白、平均血小板体积和超氧化物歧化酶含量显著高于笼养组(P<0.05),而平均红细胞体积和谷胱甘肽过氧化物酶显著低于笼养组(P<0.05);肉质方面,散养组胸肌肉色 b* 值和剪切力均显著低于笼养组(P<0.05),而甘氨酸、组氨酸、缬氨酸、苯丙氨酸、赖氨酸、天冬氨酸、总必需氨基酸、总氨基酸和总必需氨基酸/总氨基酸比例显著高于笼养组(P<0.05).进一步对肉质性能与血液生理生化指标进行相关性分析.在散养模式下,红细胞数与平均红细胞体积与肉色 b*、剪切力皆呈显著正相关,血红蛋白、平均红细胞体积、平均血小板体积与甘氨酸、苯丙氨酸等风味氨基酸呈显著正相关(P<0.05);而在笼养模式,红细胞数也与肉色 b* 值呈正相关(P<0.05).综上,散养模式更适合改善城口山地鸡的胸肌肉质风味和血液代谢.
This experiment took 200 120-day-old Chengkou mountain chickens as the research object,divided into two groups:cage breeding and free-range breeding,and compared and analyzed the differences and correlations between their chest muscle quality and blood physiological and biochemical indicators.The results showed that the red blood cell count,hemoglobin,mean platelet volume,and superoxide dismutase content in the free-range group were significantly greater than those in the cage breeding group(P<0.05),while the mean corpuscular volume and glutathione peroxidase were significantly lower than those in the cage breeding group(P<0.05);in terms of meat quality,the b* value of breast muscle color and shear force in the free-range group were significantly lower than those in the cage breeding group(P<0.05),while the contents of glycine,histidine,valine,phenylalanine,lysine,aspartic acid,total essential amino acids,total amino acids,and the ratio of total essential amino acids/total amino acids were significantly higher than those in the cage breeding group(P<0.05).Further correlation analysis was conducted between meat quality performance and blood physiological and biochemical indicators.Under the free-range mode,the red blood cell count was significantly positively correlated with mean corpuscular volume,b* value of meat color,and shear force;hemoglobin,mean corpuscular volume,and mean platelet volume were significantly positively correlated with umami amino acids such as aspartic acid(P<0.05);while in the cage breeding mode,red blood cell count was also positively correlated with the b* value of meat color(P<0.05).In summary,the free-range mode is more suitable for improving the chest muscle quality and flavor of Chengkou mountain chickens and blood metabolism.
