Effect of Post-fermentation on the Structure-function Relationship of Dark Tea Polysaccharides
茶多糖是黑茶主要的生物活性成分之一,其构效关系受后发酵工艺的深刻影响.文章阐述了黑茶独特的后发酵过程中,微生物及其分泌酶的协同作用对茶多糖化学组成和结构的调控转变规律,进一步探讨了这些结构重塑对茶多糖抗氧化、降糖、降脂及抗癌等多方面生物活性的影响机制.文章不仅有助于阐明黑茶干预代谢紊乱的科学机理,完善后发酵茶多糖的"结构—功能"关系理论,更为茶资源的深加工、高值化利用及功能性食品的研发应用提供了参考.
Tea polysaccharides are among the major bioactive constituents of dark tea,and their structure-function relationships are profoundly shaped by the post-fermentation process.This review focuses on elucidating how the synergistic actions of microorganisms and their secreted enzymes during the unique post-fermentation of dark tea modulate transformations in the chemical composition and structural characteristics of tea polysaccharides.It further discusses how such structural remodeling influences their diverse bioactivities,including antioxidant,hypoglycemic,hypolipidemic,and anticancer effects.Overall,this review not only contributes to clarifying the mechanisms by which dark tea intervenes in metabolic disorders and refine the theoretical framework of structure-function relationships in fermented tea polysaccharides,but also provides important references for the deep processing and high-value utilization of tea resources.as well as the development of functional food products.
