药食同源品类发酵研究的文献计量与热点演化分析OA

Bibliometrics and hotspot evolution analysis of fermentation research on food-medicine homology categories:A CiteSpace-based visualization study

目的 采用文献计量学方法,梳理了近 70 年药食同源品类发酵领域的研究文献,揭示了该领域的研究热点与演进趋势.方法 在中国知网、万方和维普数据库中检索药食同源品类发酵相关文献,经筛选获得有效文献后,使用CiteSpace 6.4.R1 软件对文献的年发文量、作者合作网络、机构合作网络进行了统计分析,并对关键词进行了共现分析、聚类分析、时区分布分析和突现词探测.结果 共纳入 6254 篇有效的中文文献.年度发文量呈持续增长态势.江南大学是该领域发文量最多的机构,发表了 186 篇文章;章克昌是发文量最多的作者,发表了 52 篇文章.高频关键词包括发酵、灵芝、抗氧化等.关键词聚类分析和突现检测结果显示,研究热点集中于发酵机理、微生物筛选、药食同源基质分类、工艺优化及应用开发等方面.结论 近70 年来,药食同源发酵研究呈现持续增长趋势.研究热点主要集中于微生物菌株筛选、发酵工艺优化、活性成分转化及功能评价等方面.研究范式逐步由以工艺为导向的研究转向以作用机制为导向的探索.

Objective To review the research literature on fermentation of food-medicine homology categories over the past 70 years,and to reveal the research hotspots and evolutionary trends in this field.Methods Relevant literature on fermentation of food-medicine homology categories was retrieved from the CNKI,Wanfang,and VIP databases.After screening to obtain valid publications,CiteSpace software was used to perform statistical analyses on annual publication volume,author collaboration networks,and institution collaboration networks.Co-occurrence analysis,cluster analysis,time-zone distribution analysis,and burst term detection were conducted on keywords.Results A total of 6,254 valid Chinese-language articles were included.The annual publication volume showed a continuous growth trend.Jiangnan University was the institution with the highest number of publications in this field,having published 186 articles,and ZHANG Kechang was the author with the most publications,having published 52 articles.High-frequency keywords included fermentation,Lingzhi(Ganoderma),antioxidant,among others.The results of keyword clustering and burst detection indicated that research hotspots concentrated on fermentation mechanisms,microbial screening,classification of food-medicine homology substrates,process optimization,and application development.Conclusion Over the past 70 years,research on fermentation of food-medicine homology categories has shown a sustained growth trend.The research hotspots mainly focus on microbial strain screening,fermentation process optimization,transformation of active components,and functional evaluation.The research paradigm has gradually shifted from process-oriented investigations to mechanism of action-oriented explorations.
