不同素质鲜烟的烘烤特性及工艺优化研究OA

为提升不同素质鲜烟叶的烘烤质量,以'云烟 87'中部叶为材料,按成熟度梯度设置 3 个处理(M1、M2、M3),通过暗箱试验判断其烘烤特性,并设计快速(T1)、正常(T2)、慢速(T3)3 种变黄速率工艺试验,系统评价烤后烟叶的经济性状、外观质量与感官品质.结果表明:M2 处理的烘烤特性协调,采用 T2或 T3 工艺时,上等烟比例高、外观总分高、感官品质突出,可提升香气量及颜色得分,其中采用 T3 工艺时,外观和感官质量总分最高;M3 处理的易烤性好,但耐烤性差,T1 工艺可显著提高烟叶品质和均价,并改善油分和色度;M1 处理的耐烤性好,T3 工艺有助于提升烟叶品质,T1 工艺有利于保障均价.综上,为提升烟叶质量,建议 M1 和 M2处理采用T3 工艺,M3 处理采用T1 工艺.

To improve the curing quality of fresh tobacco leaves with different qualities,this study took the middle leaves of'Yunyan 87'as the material and set three treatments(M1,M2,M3)according to the maturity gradient.Curing characteristics were determined through dark box tests,and three curing process tests with different yellowing rates(T1:fast,T2:normal,T3:slow)were designed to systematically evaluate the economic traits,appearance quality and sensory quality of the cured tobacco leaves.The results showed that treatment M2 exhibited coordinated curing characteristics.When the T2 or T3 process was adopted,it had a high proportion of high-grade tobacco,a high total appearance score and outstanding sensory quality,which could improve aroma quantity and color score.Among them,this treatment achieved the highest total scores for appearance quality and sensory quality when the T3 process was adopted.Treatment M3 had good ease of curing but poor curing tolerance,and the T1 process significantly improved tobacco quality and average price,as well as enhanced oil content and color intensity.Treatment M1 possessed excellent curing tolerance.The T3 process helped improve tobacco quality,while the T1 process was conducive to ensuring the average price.In conclusion,to improve the quality of tobacco leaves,it is recommended to adopt the T3 process for treatments M1 and M2,and the T1 process for treatment M3.
