为探究笋头总黄酮体外抗氧化活性及其提取动力学规律,以笋头总黄酮得率为指标,通过单因素设计及响应面分析法优化提取工艺,同时通过 DPPH·、·OH 清除能力和 Fe3+还原能力(FRAP)评估笋头提取物的抗氧化活性,并建立提取动力学模型.结果表明:最佳提取工艺条件为乙醇体积分数 60%、提取温度 50℃、提取时间 73 min、液固比 30∶1(mL·g-1),在此条件下,总黄酮得率为 0.443 mg·g-1.体外抗氧化试验表明,笋头提取物对 DPPH·和·OH 自由基具有一定的清除能力,对 Fe3+具有还原能力.提取动力学分析表明,该过程符合一级动力学模型,主要为扩散控制,表观活化能(Ea)为12 010 J·mol-1.综上所述,笋头提取物具有潜在的抗氧化活性,可为竹笋产业可持续发展和笋头的高值化综合利用提供理论依据.

To investigate the antioxidant activity in vitro and extraction kinetics of total flavonoids from bamboo shoot tips,the extraction process was optimized using single-factor design and response surface analysis,with the yield of total flavonoids as the index.The antioxidant activity of the shoot tip extract was evaluated by DPPH·,·OH scavenging capacity and Fe3+reducing ability(FRAP),and an extraction kinetics model was established.The results showed that the optimal extraction process conditions were as follows:ethanol volume fraction of 60%,extraction temperature of 50℃,extraction time of 73 min,and liquid-to-solid ratio of 30∶1(mL·g-1).Under these conditions,the total flavonoid yield was 0.443 mg·g-1.In vitro antioxidant experiments indicated that the extract from bamboo shoot head had a certain scavenging ability against DPPH·and·OH free radicals,as well as a reducing ability towards Fe3+.The extraction kinetics analysis indicated that the process followed a first-order kinetic model,primarily controlled by diffusion,with an apparent activation energy(Ea)of 12 010 J·mol-1.In summary,bamboo shoot tip extracts exhibit potential antioxidant activity,providing a theoretical basis for the sustainable development of the bamboo shoot industry and the high-value comprehensive utilization of bamboo shoot tips.
