针对贺兰山东麓产区红葡萄酒酿造中传统浸渍工艺存在的浸渍温度与时间难以平衡、酚类物质提取效率与果香保留相矛盾等问题,引入皮汁分离发酵浸渍工艺.以宁夏贺兰山东麓赤霞珠和蛇龙珠葡萄为原料,设置传统同罐发酵(对照)与皮汁分离发酵(处理)两类工艺,重点研究分离后葡萄皮渣在不同温度(28、32℃)、不同时间(2、4 d)下浸渍,对葡萄酒关键理化指标的影响.结果表明,与传统工艺相比,皮汁分离浸渍工艺能保证酒精发酵顺利完成(残糖<4.00 g/L,挥发酸<0.4 g/L),并显著提高两种葡萄酒的总酸、总酚、单宁、花色苷含量和色度值.该工艺通过物理分离实现了葡萄汁的低温保香发酵与皮渣的高温高效浸提,有效解决了传统工艺中结构与果香难以兼顾的难题.综合比较表明,蛇龙珠在28℃条件下浸渍4 d的效果较好,赤霞珠则更适合在32℃浸渍2 d.

In response to the problems in the traditional maceration process of red wine production in the Helan Mountain's East Foothill Wine Region,such as the difficulty in balancing the maceration temperature and time,and the contradiction between the extraction efficiency of phenolic substances and the retention of fruit aroma,the peel and juice separation fermentation and maceration process was introduced.Using the Cabernet Sauvignon and Sauvignon Blanc grapes from the Ningxia Helan Mountain's East Foothill as raw materials,two types of processes were set up:traditional co-tank fermentation(control)and peel and juice separation fermentation(treatment).The focus was on studying the effects of macerating the separated grape peels at different temperatures(28 and 32℃)and different times(2 and 4 days)on the key physicochemical indicators of the final wine.The results showed that compared with the traditional process,the peel and juice separation maceration process could ensure the successful completion of alcoholic fermentation(residual sugar<4.00 g/L,volatile acid<0.4 g/L),and significantly increase the total acid,total phenolic content,tannin,anthocyanin content and color value of the two wines.This process achieved the low-temperature preservation of aroma in the grape juice fermentation and the high-efficiency extraction of the grape peels through physical separation,effectively solving the problem of difficult balance between structure and fruit aroma in the traditional process.Comprehensive comparison showed that the effect of Sauvignon Blanc was better when macerated at 28℃for 4 days,while Cabernet Sauvignon was more suitable for maceration at 32℃for 2 days.This study provided clear technical parameters and theoretical basis for optimizing the red wine production process in the Helan Mountain's East Foothill Region and improving product quality.
