宁夏青铜峡产区赤霞珠果实综合品质评价OA
Comprehensive Quality Evaluation and Terroir Effect Analysis of Cabernet Sauvignon Berries in Qingtongxia Region of Ningxia
为了探明宁夏贺兰山东麓青铜峡核心产区不同种植地"风土"条件对赤霞珠葡萄果实综合品质的影响,于成熟期采集了该产区26个代表性酒庄的赤霞珠果实样品,系统测定其基础理化品质(粒重、可滴定酸、单宁、总酚、花色苷、可溶性糖)、挥发性香气化合物(7类)及单体酚类物质(4类)的含量,并采用多样性分析、相关性分析及TOPSIS综合评价方法进行解析.结果表明,不同种植地果实的化学品质存在广泛差异,其中挥发性香气与单体酚类物质的变异最为显著,其平均变异系数分别达104.36%和80.93%,醚类(变异系数193.74%)、酮类(138.08%)、酸类(111.56%)、黄烷醇类(113.83%)及芪类(96.24%)为表征"风土"差异的关键指标.相关性分析显示,果实粒重与酸类香气呈极显著正相关(r=0.62,P≤0.01),与醛类香气呈显著正相关(r=0.47,P≤0.05);而单宁、总酚、花色苷均与黄烷醇类单体酚呈极显著负相关(r=-0.51~-0.53,P≤0.01),暗示类黄酮代谢途径中存在碳分配竞争.TOPSIS综合评价表明,密登堡酒庄(C值=0.608 7)、古城人家(0.483 4)和玉川(0.470 8)等地的果实综合品质表现最佳.微域"风土"主要通过调控挥发性香气和特异性酚类物质等次级代谢产物的积累来塑造赤霞珠果实的化学特征与综合品质.
In order to investigate the effects of terroir conditions from different vineyard sites within the Qingtongxia core production region of the Eastern Helan Mountains in Ningxia on the comprehensive quality of Cabernet Sauvignon grape berries.During the ripening period,berry samples of Cabernet Sauvignon were collected from 26 representative wineries in the region.A systematic analysis was conducted to determine the basic physicochemical qualities(berry weight,titratable acidity,tannin,total phenols,anthocyanins,soluble sugars),volatile aroma compounds(7 categories),and monomeric phenolic compounds(4 categories).The data was then analyzed using diversity analysis,correlation analysis,and the TOPSIS comprehensive evaluation method.The results showed that,significant variations in chemical quality were observed among berries from different vineyard sites.The most pronounced variability was found in volatile aroma compounds and monomeric phenolic compounds,with average coefficients of variation reaching 104.36%and 80.93%,respectively.Key indicators characterizing terroir differences included ethers(CV=193.74%),ketones(138.08%),acids(111.56%),flavanols(113.83%),and stilbenes(96.24%).Correlation analysis revealed that berry weight was significantly positively correlated with acid compounds(r=0.62,P ≤ 0.01)and significantly positively correlated with aldehyde compounds(r=0.47,P≤0.05).In contrast,tannin,total phenols,and anthocyanins all showed highly significant negative correlations with flavanol monomers(r=-0.51 to-0.53,P≤0.01),suggesting potential carbon allocation competition within the flavonoid biosynthesis pathway.The TOPSIS comprehensive evaluation identified Midengbao Winery(C value=0.608 7),Guchengrenjia(0.483 4),and Yuchuan(0.470 8)as having the best overall berry quality.This study demonstrates that micro-terroir primarily shapes the chemical profile and comprehensive quality of Cabernet Sauvignon berries by regulating the accumulation of secondary metabolites,such as volatile aroma compounds and specific phenolic substances.
