Effects of a compound Chinese herbal medicine additives on the meat quality of Yellow-feathered broilers

试验旨在研究复方中草药添加剂对黄羽肉鸡肉品质的影响,选取144只黄羽肉鸡脱温鸡苗(30日龄),随机分为4组,每组设6个重复,每个重复6只鸡.对照组饲喂基础日粮,0.5%组、2.0%组、4.0%组分别在基础日粮中添加5、20、40 g/kg的复方中草药添加剂.试验期120 d.结果显示,与对照组相比,各试验组胸肌、腿肌中水分、粗蛋白、粗脂肪含量差异不显著(P>0.05);2.0%组胸肌粗灰分含量显著高于4.0%组(P<0.05).黄羽肉鸡胸肌和腿肌中均含有17种氨基酸,包括6种呈味氨基酸(以谷氨酸含量最高)和7种必需氨基酸(色氨酸被酸水解,未测定).与对照组相比,各试验组胸肌中缬氨酸含量显著降低(P<0.05),其他氨基酸含量以及呈味氨基酸总量、必需氨基酸总量和氨基酸总量均有所降低(P>0.05);2.0%组和4.0%组胸肌中组氨酸含量分别升高了4.58%和3.27%(P>0.05).与对照组相比,2.0%组腿肌中天冬氨酸、蛋氨酸、精氨酸的含量分别升高了9.58%、23.08%、11.82%(P<0.05);4.0%组腿肌中天冬氨酸、蛋氨酸、酪氨酸、苯丙氨酸、精氨酸的含量分别升高了11.98%、19.23%、12.00%、11.54%、18.18%(P<0.05),呈味氨基酸总量、必需氨基酸总量和氨基酸总量分别升高了8.97%、9.60%、10.02%(P<0.05).随着日粮中复方中草药添加剂添加比例提高,各试验组腿肌中其余各种氨基酸含量及呈味氨基酸总量、必需氨基酸总量和氨基酸总量整体呈升高趋势.研究表明,在日粮中添加2.0%~4.0%复方中草药添加剂有利于提升黄羽肉鸡的肉品质.

The experiment aimed to investigate the effect of compound Chinese herbal medicine additives on the meat quality of Yellow-feathered broilers.144 Yellow-feathered broiler chicks(30 days old)were selected and randomly divided into four groups,with 6 replicates in each group and six chickens in each replicate.The control group was fed the basal diet,while the 0.5%,2.0%,and 4.0%groups were supplemented with 5,20,and 40 g/kg of compound Chinese herbal medicine additives in the basal diet,respectively.The experimental period was 120 days.The results showed that compared with the control group,there were no significant differences in the moisture,crude protein,and crude fat contents of the pectoral muscle and leg muscle in each experimental group(P>0.05).The crude ash content of the pectoral muscle in the 2.0%group was significantly higher than that in the 4.0%group(P<0.05).Yellow-feathered broilers contained 17 kinds of amino acids in their pectoral muscle and leg muscle,including six flavor amino acids(with the highest content being glutamic acid)and seven essential amino acids(tryptophan was acid hydrolyzed and not measured).Compared with the control group,the valine content in the pectoral muscle of each experimental group was significantly lower(P<0.05),and the contents of other amino acids,the total content of flavor amino acids,the total content of essential amino acids,and the total content of amino acids were all decreased(P>0.05).the histidine content in the pectoral muscle of the 2.0%group and the 4.0%group increased by 4.58%and 3.27%(P>0.05).Compared with the control group,the aspartic acid,methionine,and arginine contents in the leg muscle of the 2.0%group increased by 9.58%,23.08%,and 11.82%(P<0.05),respectively.The aspartic acid,methionine,tyrosine,phenylalanine,and arginine contents in the leg muscle of the 4.0%group increased by 11.98%,19.23%,12.00%,11.54%,and 18.18%,respectively(P<0.05).And the total content of flavor amino acids,the total content of essential amino acids,and the total content of amino acids increased by 8.97%,9.60%,and 10.02%,respectively(P<0.05).As the proportion of compound Chinese herbal medicine additives in the diet increased,the contents of other amino acids and the total content of flavor amino acids,essential amino acids,and total amino acids in the leg muscle of each experimental group showed an overall upward trend.The study showed that adding 2.0%to 4.0%of compound Chinese herbal medicine additives to the diet was beneficial for improving the muscle quality of Yellow-feathered broilers.
