Correlations Between Soil Nutrients and Nutritional Quality of Pepper in Different Ecological Regions in China

[目的]探明不同生态区土壤养分与气象条件对辣椒营养品质的交互影响,为辣椒区域化种植和品种选育提供参考.[方法]通过田间试验测定贵州、云南、河南、陕西、新疆 5个辣椒主产区的土壤 pH、有机质、全氮、全磷、全钾等养分指标,并结合气象数据,评估在 5个生态区种植 6个辣椒品种(黔椒 8号、遵辣9号、辣研 101、卓椒 52、大方皱椒、骄阳 6号)的辣椒红素、辣椒素、氨基酸、粗脂肪等 7个营养品质指标,分析 5个生态区土壤养分变异特征、辣椒品种营养品质差异及二者间相关性.[结果]贵州、云南土壤有机质(32.13~34.09 g/kg)和全氮(1.59~2.17 g/kg)含量显著高于河南、陕西、新疆(有机质≤17.19 g/kg,全氮≤0.72 g/kg),但贵州土壤速效钾(110.96 mg/kg)含量偏低;新疆土壤全钾含量最高(22.17 g/kg);河南、陕西土壤有机质和氮素匮乏.辣椒红素含量在贵州、新疆较高(82.7~91.9 µg/g),河南辣椒素含量突出(辣研101达 4.8 g/kg),氨基酸在西南产区富集(≥50.5 μmol/g).逐步回归模型显示,速效磷是辣椒红素和辣椒素的关键驱动因子(P<0.05),有机质和全氮与氨基酸呈极显著正相关(P<0.01).平均相对湿度、降雨量对辣椒红素、辣椒素、二氢辣椒素影响较大,日照时数对辣椒还原糖、粗脂肪、粗纤维影响较大.[结论]不同辣椒品种对土壤肥力水平和气象条件响应呈现地区差异,适当提高土壤有机质、全氮、全磷含量,生长季平均相对湿度高、降雨量充足的气候条件有利于辣椒香辣品质的形成,可根据土壤养分特征进行辣椒的科学种植与高品质选育.

[Objective]The interaction effect of soil nutrients and meteorological conditions in different ecological areas on quality of pepper was investigated to provide a reference for regional cultivation and variety breeding of pepper.[Method]The soil pH,organic matter,total nitrogen,total phosphorus,total potassium and other nutrient indexes of five main pepper producing areas(Guizhou,Yunnan,Henan,Shaanxi and Xinjiang)were determined by field experiments.7 nutrient quality indexes including capsanthin,capsaicin,amino acid,crude fat,dihydrocapsaicin,reducing sugar and crude fiber of 6 pepper varieties(Qianjiao 8,Zunla 9,Layan 101,Zhuojiao 52,Dafang wrinkled pepper and Jiaoyang 6)planted in 5 ecological areas were evaluated by the field experiments combined with meteorological data.The variation characteristics of soil nutrients in five ecological areas,differences in nutritional quality of pepper varieties and correlations between different nutrient indexes were analyzed.[Result]The organic matter(32.13-34.09 g/kg)and total nitrogen content(1.59-2.17 g/kg)in soils of Guizhou and Yunnan is significantly higher than those(organic matter<17.19 g/kg and total nitrogen<0.72 g/kg)in soils in of Hennan,Shaanxi and Xinjiang.The soil available potassium content in Guizhou was low(110.96 mg/kg)and soil total potassium content in Xinjiang was the highest(22.17 g/kg).The soil organic matter and nitrogen content in Henan and Shaanxi was deficient.The capsanthin content in Guizhou and Xinjiang was higher(82.7-91.9 µg/g)and the capsaicin content of Layan 101 in Henan reached 4.8 g/kg.The amino acid content in Southwest region reached more than 50.5μmol/g.The stepwise regression model showed that available phosphorus was the key driving factor of capsanthin and capsaicin(P<0.05).The organic matter and total nitrogen were positively related to amino acids very significantly.The average relative humidity and precipitation had a significant impact on capsanthin,capsaicin,and dihydrocapsaicin content of pepper,but sunshine duration had a significant effect on reducing sugar,crude fat,and crude fiber content of pepper.[Conclusion]There are differences in response of different pepper varieties from different areas to soil fertility and meteorological conditions.Properly increasing soil organic matter,total nitrogen and total phosphorus content and the climatic conditions of high average relative humidity and sufficient precipitation during growth period of pepper are beneficial to formation of spicy quality in pepper.The scientific cultivation of pepper and breeding of high-quality pepper varieties should be conducted according to the characteristics of local soil nutrients.
