晾制温湿度调控模式对雪茄烟叶生理生化及品质的影响OA
Effects of Drying Temperature and Humidity Regulation Patterns on Physiology,Biochemistry and Quality of Cigar Tobacco Leaves
为了明确适宜长沙烟区的雪茄烟晾制温湿度调控模式,为雪茄烟晾制工艺的优化提供理论依据,2023 年在湖南省宁乡市联花村,以雪茄品种哈伯纳斯的中部叶为材料,设置 3 个温湿度调控模式处理,分别为La(温湿度精准控制)、Lb(湿度精准、温度宽泛控制)和Lc(温湿度均为宽泛控制),对不同处理烟叶晾制过程中的失水、颜色变化、关键化学成分及相关酶活性进行比较分析,同时通过模糊综合评价法构建烟叶外观质量、物理特性、化学成分及感官品质的综合评价体系,对不同调控模式处理的烟叶品质进行评估.结果表明:La模式可有效调节烟叶失水速率,促进黄变和褐变过程,避免死青现象,有利于碳水化合物、总氮和烟碱的协调转化;晾制前期,La与Lb模式有利于糖类物质的充分转化;晾制后期,Lc模式的烟叶淀粉酶活性较低,但在Lc模式处理下,多酚氧化酶活性在晾晒的第5 天即达峰值[1 019.43 U/(g·min)],表明烟叶过早进入褐变期,不利于前期物质积累,且酶活性下降较快,不利于后期多酚类物质的转化.从综合效果指数来看,La模式的得分最高(79.33),其烟叶品质符合茄衣生产标准.综合分析,La模式为目前长沙烟区雪茄烟的最优晾制温湿度调控方案.
To determine the optimal temperature and humidity regulation model for the curing of cigar tobacco in Changsha tobacco-growing area and provide a theoretical basis for optimizing the cigar tobacco curing process,a study was conducted in 2023 in Lianhua Village,Ningxiang City,Hunan Province.Using the middle leaves of the cigar variety Habanas as materials,three temperature and humidity regulation models were set up:La(precise control of temperature and humidity),Lb(precise humidity with broad temperature control),and Lc(broad control of both temperature and humidity).A comparative analysis was performed on the water loss,color changes,key chemical components,and related enzyme activities of tobacco leaves during the curing process under different treatments.Additionally,a comprehensive evaluation system for tobacco leaf appearance quality,physical characteristics,chemical components,and sensory quality was established using the fuzzy comprehensive evaluation method to assess the quality of tobacco leaves under different regulation models.The results showed that the La model effectively regulated the water loss rate of tobacco leaves,promoted the yellowing and browning processes,avoided the occurrence of leaf death and greening,and facilitated the coordinated transformation of carbohydrates,total nitrogen,and nicotine.In the early stage of curing,the La and Lb models were conducive to the full transformation of sugars,while in the later stage,the amylase activity of tobacco leaves treated with the Lc model was relatively low.However,under the Lc model,the polyphenol oxidase activity peaked at 1 019.43 U/(g·min)on the 5th day of curing,indicating that the tobacco leaves entered the browning stage too early,which was not conducive to early-stage material accumulation.Moreover,the enzyme activity declined rapidly,hindering the transformation of polyphenols in the later stage.From the perspective of the comprehensive effectiveness index,the La model had the highest score(79.33),and its tobacco leaf quality met the production standards for cigar wrappers.In summary,the La model is currently the optimal temperature and humidity regulation scheme for cigar tobacco curing in the Changsha tobacco-growing area.
