一株凝结芽孢杆菌的益生菌性能评价及产乳酸条件优化OA

本研究对凝结芽孢杆菌的益生菌性能进行评价,同时对其产酸条件进行优化.结果表明:该菌株在温度为80 ℃,pH为2,牛胆盐浓度为0.3%的条件下存活率能够达到40%,而且对人工胃液和肠液表现良好的耐受性.在产酸条件的优化中发现,在培养基成分为葡萄糖15 g/L、牛肉膏15 g/L、蛋白胨15 g/L、磷酸氢二钾6 g/L,培养温度40 ℃、初始pH 7.7、接种量0.5%、摇床转速180 r/min条件下发酵48 h时,其乳酸产量可以达到16.36 g/L.综上,该菌株具有良好的益生菌性能和产乳酸能力,在微生态制剂的制备与应用中有广泛应用前景.

In this study,the probiotic performance of Bacillus coagulans was evaluated,and the acid production conditions were optimized.The results showed that the survival rate of the strain could reach 40%at a temperature of 80 ℃,pH 2,and a bovine bile salt concentration of 0.3%,and it showed good tolerance to artificial gastric and intestinal juices.In the optimization of acid production conditions,it was found that the lactic acid yield could reach 16.36 g/L when fermented for 48 hours under the conditions of medium composition glucose 15 g/L,beef paste 15 g/L,peptone 15 g/L,dipotassium phosphate 6 g/L,culture temperature 40 ℃,initial pH 7.7,inoculum amount 0.5%,and shaker speed of 180 r/min.Therefore,this strain had good probiotic properties and lactic acid production ability and had a wide application prospect in the preparation and application of microecological preparations.
