3种中支卷烟化学成分与感官质量的相关性分析OA
Correlation analysis between chemical components and sensory quality of three medium-sized cigarettes
为研究中支卷烟的常规化学成分和挥发性香味成分与感官质量的相关性,选取 3种不同品牌的市售卷烟,利用偏最小二乘法(PLSR)分析其化学成分质量浓度或质量分数与感官评吸得分的关系.结果表明,PLSR模型的X和Y的解释方差分别为 92.22%和 96.02%,预测方差Q2 为 91.28%,表明模型拟合良好.变量贡献度分析显示,共有 20种化学成分对卷烟感官质量得分贡献显著,包括 4种常规成分和 16种挥发性香味成分.主成分分析(PCA)结果表明,不同种类的卷烟特征成分划分明显,影响感官评价的关键成分各异,特定化合物的质量浓度及质量分数与各自的感官评分(Y)均呈正相关.
To study the correlation between the conventional chemical components,volatile flavor components,and sensory quality of medium-sized cigarettes,three different brands of commercially available cigarettes were selected.The relationship between their chemical component mass concentration and mass fraction and sensory evaluation scores was analyzed using partial least squares regression(PLSR).The results showed that the explained variances of X and Y in the PLSR model were 92.22%and 96.02%,respectively,and the predicted variance Q2 was 91.28%,indicating that the model was well-fitted.The variable contribution analysis showed that 20 chemical components contributed significantly to the sensory quality score of cigarettes,including 4 conventional components and 16 volatile aroma components.Principal component analysis(PCA)results showed that the characteristic components of different cigarette types were clearly separated,and the key components affecting sensory evaluation varied.The component mass concentration and mass fraction of specific compounds were positively correlated with the sensory evaluation scores of each cigarette.
