生长年限对兰州百合种球品质的影响OA
Effects of different growth years on bulbs quality in Lanzhou lily
[目的]本文旨在通过建立兰州百合((Lilium brownii var.viridulum)质量评价体系,获得生长年限与鳞茎品质的相关性,以指导兰州百合的生产与管理.[方法]本研究检测了早春采挖的 3~7 年生(Y3、Y4、Y5、Y6、Y7)种球外观品质、基本营养成分、酚类化合物和氨基酸营养化学成分.[结果]兰州百合鳞茎亮白,微黄,含水量适中,富含淀粉、蛋白质、可溶性糖和膳食纤维,含有以熊果酸为最的10种酚类化合物和19种氨基酸(AA).3~6年生长年限显著影响种球品质.随生长期延长,4~6 年生种球质量逐年增大,比3年生极显著增加1.67~2.68倍,色泽b*显著降低 1.44%~3.50%,微黄色更淡,白度提高;兰州百合种球中淀粉和酚类化合物含量显著减少;可溶性糖、果糖、AA含量显著增加,且可溶性膳食纤维(SDF)/不溶性膳食纤维(IDF)显著升高.相关性分析表明生长期与可溶性糖含量极显著正相关,与酚类化合物含量极显著负相关.主成分分析显示3年生种球淀粉和酚类化合物较多;4年生中总AA、必需AA、鲜味AA、芳香族AA和蛋白质含量丰富;5 年生和 6 年生百合不仅种球个头大,而且多种类型AA、果糖和可溶性糖含量均较高.[结论]随生长期延长,兰州百合种球增大,经济效益提高,且色泽、甜味、鲜味和口感均改善,但酚类化合物减少,药用品质降低.生产中推荐5年生是兰州百合适宜种植年限.
[Objectives]The paper aimed to establish quality evaluation system in Lanzhou lily(Lilium brownii var.viridulum),the correlation between growth year period and bulbs quality was acquired to guide the production and management of Lanzhou lily.[Methods]Appearance quality,elementary nutrients and nutritional chemical compositions(phenolic compounds and amino acids)were detected in Lanzhou lily bulbs growing for 3-7 years(Y3,Y4,Y5,Y6,Y7)which were harvested in the early spring.[Results]Lanzhou lily bulbs were bright white with slight yellowness.And lily bulbs contained moderate water content,were abundant in starch,protein,soluble sugars and dietary fiber,as well as 10 phenolic compounds including ursolic acid with highest level and 19 amino acids(AA).3-6 years growth period greatly affected the quality of lily bulbs.With the extension of growth period,lily bulbs significantly increased year by year,by 1.67-2.68 times compared with Y3.b*value significantly decreased by 1.44%-3.50%in color,so the whiteness was improved.In addition,the contents of starch and phenolic compounds significantly decreased,soluble sugar,fructose and AA contents were dramatically elevated,and the ratio of soluble dietary fiber(SDF)to insoluble dietary fiber(IDF)remarkably increased too.The correlation analysis showed that the growth period was positively significantly correlated with soluble sugar and negatively significantly correlated with phenolic compounds.Principal component analysis demonstrated that the content of starch and phenolic compounds with high level were in Y3;Y4 had large size,more AA and protein;while Y5 and Y6 were bigger in size,and richer in AA and fructose.[Conclusions]With the growth period prolonging,Lanzhou lily bulbs grew larger,which promoted the economic benefits.And bulbs quality such as the color,sweetness,umami and taste were improved.However,the reduction of phenolic compounds weakened the medicinal quality.It was recommended that the suitable growth period was 5 years for lily produce.
