3种药食同源功效油料中油脂的品质及风味分析OA
Analysis of the Quality and Flavor of Oils from Three Oilseeds with the Efficacy of Medicinal Food Homologous Substances
以具有药食同源功效的西葫芦籽、巴旦木仁和辣木籽为原料,采用溶剂浸提法提取油脂.对 3 种油脂的酸价、过氧化值、脂肪酸组成和挥发性风味物质进行测定.结果表明:其酸价和过氧化值均符合国家标准;巴旦木仁油脂和辣木籽油属于高油酸型油脂,西葫芦籽油属于高亚油酸型油脂,3 种油脂均为不饱和脂肪酸含量高的油脂,其中巴旦木仁油中最高(92.07%),西葫芦籽油次之(80.52%);电子鼻结果表明巴旦木仁油和辣木籽油风味物质较为接近;西葫芦籽油、巴旦木仁油和辣木籽油中分别鉴定出 62、57 和 70 种挥发性物质,3 种油脂共有的挥发性物质为 22 种.基于OPLS-OA模型分析的VIP值预测分布筛选出 3 种油脂有 37 种差异香气物质.
Plant oils were extracted from the raw materials of zucchini seeds,almond kernels and moringa seeds with medicinal and edible homology using the solvent extraction method.The acid value,peroxide value,fatty acid composition and volatile flavor substances of the three oils were determined.The results showed that the basic physical and chemical indexes of the three oils met the relevant national standards.The three oils were all high unsaturated fatty acid content oils,among which almond kernels oil was the highest(92.07%),and zucchini seed oil was the second(80.52%).The results of electronic nose showed that the flavor substances of almond kernels oil and moringa seed oil were close.A total of 62,57 and 70 volatile compounds were identified in zucchini seed oil,almond kernels oil and moringa seed oil,respectively,and 22 volatile compounds were shared by the three oils.Based on the VIP value prediction distribution obtained from the OPLS-DA model,37 different aroma substances were identified in the three oils.
