海藻酸钠水凝胶复合膜的制备、表征及在香蕉保鲜中的应用OA

水凝胶是一种具有三维交联网络结构的高分子聚合物,因其较高的吸水性、延展性、生物相容性等优点,在食品保鲜领域受到越来越多的关注.以海藻酸钠(SA)、丙烯酰胺(AM)、纳米二氧化钛(TiO2)为原料制备了水凝胶复合膜,并将其应用于香蕉保鲜试验.结果表明,该水凝胶复合膜可降低香蕉的水分损失,延缓果实腐烂,保鲜7 d后,香蕉重量仅减少2.38%,且果实内部未出现腐烂现象.由此可见,该水凝胶复合膜在水果保鲜方面具备良好的应用前景.

Hydrogel is a kind of polymer with a three-dimensional cross-linked network structure,which has received increasing attention in the field of food freshness due to their high hydrophilicity,ductility and good biocompatibility.In this paper,sodium alginate(SA),acrylamide(AM)and nano TiO2 were used as raw materials to prepare hydrogel composite membrane,which was applied to banana freshness.The results showed that the hydrogel composite membrane could reduce the water loss in bananas and delay the fruit decay.After 7 days of preservation,the weight of bananas only decreased by 2.38%,and there was no decay inside the fruits.Therefore,the hydrogel composite membrane has a promising future in the field of fruit freshness.
