3份马铃薯品种营养及加工品质的分析OA
Analysis of the Nutrition and Processing Quality of Three Potato Varieties
以昭薯12号、丽薯6号和青薯9号为研究对象,比较其淀粉合成相关基因表达、干物质含量、淀粉含量、直链淀粉含量、淀粉糊化特性、糖含量、蛋白质含量及氨基酸含量的差异.结果表明,9个淀粉合成相关基因在3份马铃薯中的表达具有显著差异:青薯9号的AGPS1.1、SBE3和ISA2的表达更高;丽薯6号的AGPL3、GBSSI和SS5的表达更高;昭薯12号的SBE2、ISA1和ISA3表达更高.淀粉的理化特性分析表明,青薯9号具有更高的干物质(21.72%)和淀粉含量(69.24%);丽薯6号具有高的直链淀粉含量(14.58%)和更大的淀粉颗粒;昭薯12号的干物质、淀粉和直链淀粉含量较高,具有更小的淀粉颗粒和更高的峰值黏度(6 768 cp);此外,昭薯12号和丽薯6号还具有更低的峰值时间.3份马铃薯的蛋白质没有差异,但是昭薯12号具有更高的总氨基酸含量.3份马铃薯的还原糖都低于0.3%.研究结果为云南马铃薯品种的加工应用提供了参考.
Taking Zhaoshu 12,Lishu 6 and Qingshu 9 as the research objects,this study compared the differ-ences in the expression of starch synthesis-related genes,dry matter content,starch content,amylose content,starch pasting properties,sugar content,protein content and amino acid content among them.Significant differ-ences were observed in the expression of nine starch synthesis-related genes in the three potato varieties:Qing-shu 9 showed higher expression levels of AGPS1.1,SBE3 and ISA2,while Lishu 6 exhibited higher expres-sion levels of AGPL3,GBSSI and SS5,and Zhaoshu 12 had higher expression levels of SBE2,ISA1 and ISA3.Analysis of the physicochemical properties of starch revealed that Qingshu 9 had the highest dry matter content(21.72%)and starch content(69.24%),while Lishu 6 possessed a high amylose content(14.58%)and larger starch granules,and Zhaoshu 12 had relatively high dry matter content,starch content,and amylose content along with smaller starch granules and a higher peak viscosity(6 768 cp).In addition,both Zhaoshu 12 and Lishu 6 had a shorter peak time.There was no significant difference in protein content among the three potato varieties,but Zhaoshu 12 had a higher total amino acid content,and the reducing sugar content of all three potato varieties was below 0.3%.The results of this study provide a reference for the processing and ap-plication of potato varieties in Yunnan.
