芡实植物基发酵乳制备工艺及抗氧化性研究OA

为进一步丰富植物基发酵乳品类、拓展芡实深加工领域,以芡实为原料制备芡实植物基发酵乳,通过单因素试验和响应面分析法,以模糊感官评分为评价标准,优化芡实植物基发酵乳的生产工艺,并将其与普通发酵乳和芡实发酵乳进行对比,研究其抗氧化特性.结果显示,最佳的芡实植物基发酵乳生产条件为:料液比例1∶5,乳酸菌接种量 0.19%,发酵时间 7.95 h,发酵温度 41℃.在此条件下发酵乳可获得 88.5±0.14 分的模糊感官评分,且其理化和微生物指标均符合相关标准.芡实植物基发酵乳对DPPH、ABTS自由基具有显著的清除能力,IC50 分别为23.33 mg/mL和 31.80 mg/mL,表现出优于对照样品的抗氧化性能.以上结果表明,芡实可作为一种优质原料用于植物基发酵乳的开发.

To further enrich the variety of plant-based fermented milk products and expand the deep processing field of Euryale ferox,this study prepared Euryale ferox plant-based fermented milk(EPFM)using Euryale ferox as raw materials.Taking fuzzy sensory score as the evaluation index,the fermentation process of EPFM was optimized by single-factor and response surface experiments.Meanwhile,its antioxidant properties were investigated by comparing ordinary fermented milk with Euryale ferox fermented milk(as control samples).The results showed that the optimal production process conditions for EPFM were as follows:solid-to-liquid ratio of 1∶5,lactic acid bacteria inoculation amount of 0.19%,fermentation time of 7.95 hours,and fermentation temperature of 41℃.Under these fermentation conditions,the fuzzy sensory score of EPFM was 88.5±0.14,and the physical,chemical and microbial indicators all met the relevant standard requirements.The IC50 values of EPFM were 23.33 mg/mL and 31.80 mg/mL for DPPH free radicals and ABTS free radicals,respectively.EPFM demonstrated better antioxidant performance compared with the control samples.The above results indicate that Euryale ferox can be utilized as a high-quality raw material for the development of plant-based fermented milk.
