葛菊功能饮料的抗氧化活性及解酒功效研究OA

This study aims to evaluate the antioxidant activity in vitro and alcohol-detoxification function of an ancient prescription-based functional beverage(Ge-Ju functional beverage,formulated with Puerariae Flos and Chrysanthemum for alcohol relief),and to explore the correlation between its activities and the total flavonoid content.DPPH method,ABTS method and salicylic acid method were used to study the antioxidant activity of the functional beverage in vitro.By investigating the activation of athanol dehydrogenase(ADH)and acetaldehyde dehydrogenase(ALDH)of the functional beverage,the alcohol-detoxification function in vitro was studied.The total flavonoid content of the functional beverage and different control solutions were determined by ultraviolet spectrophotometry,and the correlation between the total flavonoid content and the antioxidant activity and alcohol-detoxification function activity was examined using SPSS analysis software.The results have shown that the Ge-Ju functional beverage not only has the antioxidant effect of scavenging free radicals,but also has the effect of activating ADH and ALDH.Correlation analysis was conducted between the total flavonoid content in different solutions and their scavenging rates against DPPH,ABTS,and hydroxyl radicals,as well as their activation rates on ALD and ALDH.The correlation coefficients were 0.668,0.759,0.906,0.777,and 0.723,respectively,indicating a strong positive correlation between total flavonoid content and both antioxidant activity and alcohol?detoxifying efficacy.Therefore,the functional beverage has potential effects of relieving alcohol intoxication and protecting the liver,and it has certain development value.
