马铃薯淀粉薄膜包装性能的影响因素研究OA

Study on factors affecting the packaging performance of potato starch films

采用流延法制备马铃薯淀粉基薄膜,通过对薄膜进行扫描电镜,以及透光率、水溶性、水蒸气渗透率、厚度和机械性能的测定,探究淀粉浓度、甘油浓度和淀粉糊化温度对薄膜性能的影响.结果显示,最佳因素配比为淀粉添加浓度4 g、甘油添加量 3%、糊化温度 90℃.当淀粉浓度为 4 g时,SEM图像显示薄膜表面光滑平整.拉伸强度和断裂伸长率分别为 1.56 MPa和92.7%时,表现出较为优异的性能.当甘油添加量为 3%时,薄膜表面SEM图像无褶皱、截面平整,且水蒸气渗透性和机械性能也明显改善.淀粉糊化因素结果显示,随着糊化温度的升高,薄膜的拉伸强度和断裂伸长率也得到增强.研究结果表明,淀粉浓度、甘油浓度和糊化温度能够不同程度影响马铃薯淀粉薄膜的包装性能.

To prepare potato starch-based films via the casting method,this study investigated the effects of starch concentration,glycerol concentration,and starch gelatinisation temperature on film properties.Characterizations included scanning electron microscopy(SEM)observation,as well as measurements of light transmittance,water solubility,water vapor permeability,thickness,and mechanical properties.The results showed that the optimal factor ratios were as follows:starch addition concentration of 4 g,glycerol addition of 3%,and gelatinisation temperature of 90℃.At a starch concentration of 4 g,SEM images revealed a smooth and flat film surface,with the tensile strength and elongation at break reaching 1.56 MPa and 92.7%,respectively,indicating relatively excellent performance.When the glycerol addition was 3%,the SEM images of the film surface were wrinkle-free and cross-sectionally flat,and the water vapor permeability and mechanical properties were also significantly improved.The results of starch pasting factors also clearly showed that the tensile strength and elongation at break of the films were enhanced with the increase of pasting temperature.In summary,starch concentration,glycerol concentration and pasting temperature can affect the packaging properties of starch films to different degrees.
