池塘微流水环境生态草鱼的肌肉营养成分分析与评价OA

为了解池塘微流水环境生态草鱼的肌肉品质和药物残留情况,比较分析了微流水池塘养殖草鱼和传统精养池塘草鱼肌肉常规营养成分、氨基酸、脂肪酸及药物残留等指标,并同步检测了养殖水源水质.结果显示,草鱼池塘养殖水源无异色、异臭、异味,符合《无公害农产品 淡水养殖产地环境条件》(NY/T 5361-2016)标准要求;微流水池塘养殖草鱼肌肉中粗蛋白质质量分数为(20.21±0.33)%,显著高于传统精养池塘草鱼(P<0.05);微流水池塘养殖草鱼肌肉中氨基酸总量(TAA)、必需氨基酸总量(TEAA)及呈味氨基酸总量(TDAA)分别为(17.56±0.60)%、(7.22±0.33)%、(8.02±0.24)%,均显著高于传统精养池塘草鱼(P<0.05);微流水池塘养殖草鱼肌肉中多不饱和脂肪酸(PUFA)占脂肪酸总量的质量分数为(32.44±1.33)%,显著低于传统精养池塘草鱼(P<0.05),饱和脂肪酸(SFA)和单不饱和脂肪酸(MUFA)含量分别为(23.35±0.10)%、(44.21±1.24)%,与传统精养池塘草鱼无显著差异(P>0.05);2 种环境中的草鱼均未检测出药物残留.研究表明,微流水池塘环境的草鱼其肌肉氨基酸组成平衡、营养合理、食用安全.

In order to understand the muscle quality and drug residues of grass carp(Ctenopharyngodon idella)in the pond with micro-flowing water,a comparative analysis was conducted on the conventional nutrients,amino acids,fatty acids and drug residues in the muscle of grass carp cultured in micro-flowing water ponds and in tradi-tional intensive ponds.The water quality of culturing water sources was simultaneously monitored.The results showed that the water source for grass carp pond farming was free of unusual color,odor and taste,meeting the re-quirements of the Environmental Conditions of Freshwater Aquaculture Areas for Pollution-Free Agricultural Prod-ucts(NY/T 5361-2016)standard.The crude protein content in the muscle of grass carp cultured in micro-flowing ponds was(20.21±0.33)%,which was significantly higher than that in traditional intensive ponds(P<0.05).The total amino acids(TAA),total essential amino acids(TEAA),and total flavor amino acids(TDAA)in the muscle of grass carp cultured in micro-flowing ponds were(17.56±0.60)%,(7.22±0.33)%,and(8.02±0.24)%,respectively,which were all significantly higher than those in traditional intensive ponds(P<0.05).The proportion of polyunsaturated fatty acids(PUFA)in the total fatty acids of grass carp in the micro-flowing ponds was(32.44±1.33)%,which was significantly lower than that in traditional intensive ponds(P<0.05).The contents of saturated fatty acids(SFA)and monounsaturated fatty acids(MUFA)were(23.35±0.10)%and(44.21±1.24)%,respectively,which showed no significant difference from those in traditional in-tensive ponds(P>0.05).No drug residues were detected in the grass carp from either environment.The study in-dicates that C.idella cultured in micro-flowing pond environments have balanced muscle amino acid composition,reasonable nutritional value and are safe for consumption.
