为研究紫锥菊提取物对八眉三元猪屠宰性能、肌肉抗氧化能力和肌肉品质的影响,本试验以48只八眉三元猪为研究对象,随机分成4组,每组12 头,试验周期为42 d,其中预饲期7d,正试期 35 d.对照组(CON)饲喂基础饲粮,试验组T1、T2 和T3 在对照组饲粮基础上分别加入 5、10 g/kg和 15 g/kg紫锥菊提取物.试验结果显示:(1)与CON组相比,各试验组活体重和屠宰率显著提高(P<0.05).(2)与CON组相比,试验组肌肉丙二醛(MDA)含量显著降低,T1组总抗氧化能力(T-AOC)显著提高,T2组T-AOC、超氧化物歧化酶(SOD)、过氧化氢酶(CAT)和谷胱甘肽过氧化酶(GSH-Px)含量显著提高,T3组CAT含量显著提高(P﹤0.05).(3)与CON组相比,T2组背最长肌的剪切力显著降低(P﹤0.05).(4)与CON组相比,试验组背最长肌中赖氨酸、苏氨酸、甘氨酸、天冬氨酸、羟脯氨酸、半胱氨酸的含量显著提高(P﹤0.05).(5)与CON组相比,T2组饱和脂肪酸(SFA)含量显著降低,单不饱和脂肪酸(MUFA)含量显著升高,T3组MUFA含量显著升高(P﹤0.05).(6)肝脏脂肪:与CON组相比,T1组ACC和PPARγ的蛋白水平显著降低,CPT1的mRNA和蛋白水平显著提高,HSL的mRNA水平显著提高(P﹤0.05);T2组PPARγ的mRNA和蛋白水平显著降低,SREBP1 的mRNA水平显著降低,ACC的mRNA和蛋白水平显著降低,HSL、CPT1 的mRNA和蛋白水平显著提高(P﹤0.05);T3组PPARγ的mRNA和蛋白水平显著降低,ACC的蛋白水平显著降低,SREBP1的mRNA水平显著降低,CPT1 的mRNA和蛋白水平显著提高(P﹤0.05).皮下脂肪:与CON组相比,T1 组SREBP1和PPARγ的mRNA水平显著降低,CPT1的mRNA和蛋白水平显著提高,HSL的蛋白水平显著提高(P﹤0.05);T2组ACC、SREBP1、PPARγ的mRNA和蛋白水平显著降低,HSL的mRNA和蛋白水平显著提高,CPT1 的mRNA水平和蛋白水平显著提高(P﹤0.05);T3组SREBP1的mRNA水平显著降低,PPARγ和ACC的mRNA和蛋白水平显著降低,HSL、CPT1的mRNA和蛋白水平显著提高(P﹤0.05).综上所述,紫锥菊提取物能够提高八眉三元猪屠宰性能、背最长肌抗氧化能力、肌肉品质、氨基酸和脂肪酸含量,调控脂质代谢因子的表达,预防脂肪沉积导致的脂质代谢紊乱.在本试验条件下,紫锥菊提取物添加量为10 g/kg时作用效果最佳.

The aim of this experiment was to investigate the effects of Echinacea extract on slaughter performance,muscle antioxidant capacity,meat quality in eight-brow ternary pigs.In the present experiment,48 Bamei ternary pigs were randomly divided into 4 groups with 3 replicates each and 4 pigs in each replicate.The experimental period was 42 days,including 7 days of pre-feeding period and 35 days of main test period.The control group was fed a basal diet,while the experimental groups T1,T2 and T3 were supplemented with Echinacea purpurea extract at 5,10 g/kg and 15 g/kg,respectively,on top of the control diet.The results showed that:(1)Compared with CON group,slaughter rate of each experimental group were significantly increased(P<0.05).(2)Compared with the CON group,the malondialdehyde(MDA)content was significantly reduced in the test group,total antioxidant capacity(T-AOC)content was significantly increased in the T1 group,T-AOC,superoxide dismutase(SOD),catalase(CAT)and glutathione peroxidase(GSH-Px)content was significantly increased in the T2 group,and CAT content was significantly increased in the T3 group(P<0.05).(3)The shear force of the longest dorsal muscle was significantly lower in the T2 group compared with the CON group(P<0.05).(4)The content of lysine,threonine,glycine,aspartic acid,hydroxyproline,and cysteine was significantly higher in the experimental group compared with the CON group(P<0.05).(5)Compared with the CON group,the saturated fatty acid(SFA)content was significantly lower and the monounsaturated fatty acid(MUFA)content was significantly higher in the T2 group,and the MUFA content was significantly higher in the T3 group(P<0.05).(6)Liver fat:compared with the CON group,the protein levels of ACC and PPARγ were significantly reduced in the T1 group,the mRNA and protein levels of CPT1 were significantly increased,and the mRNA level of HSL was significantly increased in the T2 group(P<0.05);The mRNA and protein levels of PPARγ were significantly reduced,the mRNA level of SREBP1 was significantly reduced,and the mRNA and protein levels of ACC levels were significantly reduced,and the mRNA and protein levels of HSL and CPT1 were significantly increased(P<0.05);In the T3 group,the mRNA and protein levels of PPARγ were significantly reduced,the protein level of ACC was significantly reduced,the mRNA level of SREBP1 was significantly reduced,and the mRNA and protein levels of CPT1 were significantly increased(P<0.05).Subcutaneous fat:compared with the CON group,the mRNA levels of SREBP1 and PPARγ were significantly reduced in the T1 group,the mRNA and protein levels of CPT1 were significantly increased,and the protein level of HSL was significantly increased(P<0.05);In the T2 group,the mRNA and protein levels of ACC,SREBP1,and PPARγ were significantly reduced,the mRNA and protein levels of HSL were significantly increased,and the mRNA level and protein level of CPT1 were significantly increased(P<0.05);In the T3 group,the mRNA level of SREBP1 was significantly reduced,the mRNA and protein levels of PPARγ and ACC were significantly reduced,and the mRNA and protein levels of HSL and CPT1 were significantly increased(P<0.05).In conclusion,Echinacea extract improved meat quality by increasing growth performance,slaughter performance,antioxidant capacity of the longest back muscle,muscle quality,amino acid and fatty acid content,and regulated the expression of lipid metabolism factors to prevent lipid metabolism disorders caused by fat deposition in eight-brow ternary pigs.Under the conditions of this experiment,the best effect was achieved when the concentration of Echinacea extract-chicoric acid was 10 g/kg.
