民猪肌肉脂肪代谢酶活性与肌内脂肪含量关系的研究OA
Study on the relationship between muscle fat metabolism enzyme activities and intramuscular fat content in Min pigs
为了探究民猪肌肉脂肪代谢酶活性与肌内脂肪(IMF)含量的内在联系,并剖析其对肌肉嫩度的影响机制,试验以体重为 95 kg的民猪和大白猪为研究对象,测定其脂肪代谢酶[苹果酸脱氢酶(malate dehydrogenase,MDH)、脂肪酸合成酶(fatty acid synthase,FAS)、脂蛋白脂肪酶(lipoprotein lipase,LPL)、激素敏感性脂肪酶(hormone-sensitive lipase,HSL)]活性和IMF含量及肌肉剪切力,采用Pearson相关性分析方法分析民猪脂肪代谢酶活性对IMF含量和肌肉嫩度的影响.结果表明:民猪IMF含量显著高于大白猪(P<0.05),剪切力极显著低于大白猪(P<0.01);MDH、FAS和LPL活性显著高于大白猪(P<0.05),HSL活性显著低于大白猪(P<0.05);民猪肌肉组织中MDH活性与IMF含量呈极显著正相关(P<0.01),与剪切力呈显著负相关(P<0.05);FAS活性与剪切力呈显著负相关(P<0.05);LPL活性与IMF含量呈显著正相关(P<0.05);HSL活性与 IMF含量呈显著负相关(P<0.05),与剪切力呈显著正相关(P<0.05).说明民猪通过提升脂肪合成酶(MDH、FAS、LPL)活性、抑制脂肪分解酶(HSL)活性的协同调控模式,显著增强肌内脂肪沉积能力并改善肉质嫩度.
In order to investigate the intrinsic relationship between the activity of muscle fat metabolism enzymes and intramuscular fat content in Min pigs,and to analyze its effect mechanism on the tenderness of muscle,in the experiment,Min pigs and Large White pigs with 95 kg body weight were selected as the research subjects,and the activities of fat metabolism enzymes(MDH,FAS,LPL,and HSL),and muscle IMF content,shear force were determined.Pearson correlation analysis was used to analyze the effects of fat metabolism enzyme activity on IMF content and muscle tenderness in Min pigs.The results showed that the content IMF and the activity of MDH,FAS and LPL in Min pigs was significantly higher than those in Large White pigs(P<0.05),while the shear force and HSL activity were significantly lower than those in Large White pigs(P<0.05).MDH activity in the muscle tissue of Min pigs was extremely significantly positively correlated with the IMF content(P<0.01),and significantly negatively correlated with the shear force(P<0.05).FAS activity was negatively correlated with the shear force(P<0.05).LPL activity was significantly positively correlated with the IMF content(P<0.05).HSL activity was significantly negatively correlated with the IMF content(P<0.05),and significantly positively correlated with the shear force(P<0.05).The results indicated that the synergistic regulatory pattern through enhancing the activity of fat enzymes(MDH/FAS/LPL)and inhibiting the activity of fat-breaking enzymes(HSL)could significantly enhance the IMF deposition capacity and improve the tenderness of meat quality in Min pigs.
