超加工食品的国际研究热点及发展趋势的可视化分析OA
Visual Analysis of International Research Hotspots and Development Trends of Ultra-Processed Food
目的:对超加工食品相关研究的热点及趋势进行分析,为后续研究提供参考.方法:在Web of Science核心合集中检索 2011年 1月 1日—2024年 12月 31日超加工食品领域的相关文献,使用CiteSpace 6.4R1可视化软件对发文量、发文国家、研究机构、作者、关键词进行可视化分析.结果:共纳入1 272篇文献,发文量总体呈稳步上升趋势(R2=0.980 2).发文量最高的国家是巴西;发文最多的机构是圣保罗大学;发文作者中存在核心作者且内部合作紧密;高频关键词包括超加工食品、消费、肥胖、健康和风险;关键词聚类结果显著且说服力较强,主要包括食物成瘾、风险、加工食品、儿童营养、食品系统;聚类突现强度大且延续至今的关键词为脂肪和炎症性肠病.结论:目前,超加工食品的研究热点主要集中于超加工食品与慢性疾病风险、饮食健康研究及不同人群方面,发展趋势侧重于食品价格和食品政策等干预措施研究.未来需进一步加强超加工食品与慢性疾病的高质量相关性研究,并针对不同人群开展多类型的研究,探索更健康的食品加工技术和干预措施,限制超加工食品消费,以促进公共健康水平.
[Objective]To analyze the research hotspots and trends of ultra-processed food,and provide a refer-ence for the follow-up research.[Method]The core collection of Web of Science was searched for the relevant literatures in the field of ultra-processed food from Jan 1,2011 to Dec 31,2021.CiteSpace 6.4R1visualization software was used to visually analyze the number,countries,research institutions,authors,and keywords of the articles.[Result]A total of 127 2 articles were included,and the number of published articles showed a steady upward trend(R2=0.980 2).The country with the highest number of articles was Brazil.The institution with the largest number of articles was the University of Sao Paulo.There were core authors among the authors of the articles and the internal cooperation was close.The high-frequency keywords included ultra-processed food,consumption,obesity,health and risk.The keyword clustering results were significant and persuasive,mainly including food addiction,risk,processed food,child nutrition and food system.The keywords with high cluster-ing intensity and continuing to this day were fat and inflammatory bowel disease.[Conclusion]At present,the research focus of ultra-processed food is mainly focused on ultra-processed food and chronic disease risk,dietary health research and different populations.The development trend focuses on the research on intervention measures such as food price and food policy.In the future,countries need to further strengthen the high-quality correlation research between ultra-processed food and chronic diseases,and carry out multi-type research aiming at different groups of people,explore healthier food processing technologies and intervention measures,and limit the consumption of ultra-processed food,so as to promote the level of public health.
