Quality Evaluation of Clausena lansium from Different Geographical Origins Based on Principal Component Analysis and Cluster Analysis

为探究不同地区黄皮品种的功能性及加工特性差异,分别对 6 种黄皮的理化特性、多酚物质和抗氧化能力进行测定,并采用主成分分析法和聚类分析法对这 6 种黄皮进行品质分析和归类.结果表明:6 种黄皮的可溶性固形物和总酸含量分别为 12.4%~18.4%和 1.44~10.15 g/kg,其中,冰糖黄皮的可溶性固形物和总酸含量最低;黄皮不同部位的总酚含量不同,所有品种果皮总酚含量均高于果肉部位;茂名鸡心黄皮的总酚含量最高(果皮 1 384.0 mg GAE/hg,果肉 464.0 mg GAE/hg),表现出较强的抗氧化能力.对黄皮的酚类物质进行测定,果皮和果肉中芦丁含量分别为115.4~224.3 和 7.01~66.9 mg/kg,二者表儿茶素分别为 0.11~11.40 和 0.11~6.16 mg/kg,果皮果肉绿原酸含量均小于1 mg/kg.对黄皮的 17 个指标进行主成分分析,结果表明,黄皮的综合品质评价可以用 3 个主成分表述(累计贡献率达到 94.243%),其中茂名鸡心黄皮综合得分最高,冰糖黄皮得分最低.聚类分析将黄皮分为 4 类.筛选出总酚含量最高、抗氧化能力强、综合得分最高的茂名鸡心黄皮适合进一步用于功能性食品开发的研究.

To explore the differences in the functionality and processing characteristics of Clausena lansium varieties from different regions,the physicochemical properties,polyphenolic substances,and antioxidant capacities of six C.lansium varie-ties were determined.Principal component analysis and cluster analysis were used for quality evaluation and classification of these six varieties.The results showed that the soluble solids content and total acid content of the six C.lansium varieties ranged from 12.4%to 18.4%and 1.44 to 10.15 g·kg‒1,respectively.Among them,Bingtang C.lansium had the lowest contents of soluble solids and total acids.The total phenolic content varied among different parts of C.lansium,and the total phenolic content of the peel was higher than that of the pulp in all varieties.Maoming Jixin C.lansium had the highest total phenolic content(1 384.0 mg GAE·hg‒1 in peel and 464.0 mg GAE·hg‒1 in pulp)and exhibited strong antioxidant capacity.The determination of phenolic substances in C.lan-sium showed that the rutin contents in peel and pulp were 115.4-224.3 mg·kg‒1 and 7.01-66.9 mg·kg‒1,respectively;the epicatechin contents in peel and pulp were 0.11-11.40 mg·kg‒1 and 0.11-6.16 mg·kg‒1,respectively;and the chlorogenic acid contents in both peel and pulp were less than 1 mg·kg‒1.Principal component analysis was performed on 17 indicators of C.lansium,and the results indicated that the comprehensive quality evaluation of C.lansium could be expressed by three principal components(cumulative contribution rate reaching 94.243%).Among them,Maoming Jixin C.lansium had the highest comprehensive score,while Bingtang C.lansium had the lowest score.Cluster analysis classified the six C.lansium varieties into four categories.In conclusion,Maoming Jixin C.lansium,which has the highest total phenolic content,strong antioxidant capacity,and the highest comprehensive score,is suitable for further research on the development of functional foods.
