不同栽培方式的香菇及黑木耳品质分析与比较OA

探明甘肃省康县代表性食用菌种类--香菇及黑木耳在不同栽培方式下的品质差异,为甘肃省康县食用菌主流栽培方式的选择及代料基质的优化提供参考.以甘肃省康县代料和段木 2 种主要栽培方式的香菇和黑木耳为试验材料,测定并对比其子实体大小、质构特性等感官指标,以及脂肪、蛋白质、粗多糖等营养物质含量和矿质元素含量差异.结果表明,甘肃省康县代料栽培香菇品质优于段木栽培香菇,表现为菇体的大小形状规则均匀美观,主要营养成分蛋白质、膳食纤维、粗多糖含量和矿质元素钙、钾、磷含量均高于段木栽培香菇;其中,粗多糖含量为 22.6 g/kg,较段木栽培香菇显著增加 85.25%;钙含量 20.1 mg/kg、磷含量 1.68 g/kg,分别较段木栽培香菇显著高 91.43%、52.73%.代料栽培黑木耳总体品质优于段木栽培黑木耳,表现为朵形大小规则均匀美观,质构特性表现出的商品性和适口性较好,主要营养成分脂肪、蛋白质、粗多糖、黑色素、总氨基酸含量和矿质元素钙、磷含量均不同程度高于段木栽培黑木耳;其中,脂肪、蛋白质、氨基酸含量分别为 2.0、14.9、10.1 g/kg,分别较段木栽培黑木耳显著高 100%、77.38%、741.67%.综上所述,认为代料栽培更适合甘肃康县香菇、黑木耳食用菌产业发展.

This study aimed to clarify the quality differences of representative edible fungi in Kang County,Gansu Province,i.e.,Lentinula edodes and Auricularia auricula,under different cultivation methods,so as to provide references for selecting mainstream cultivation methods and optimizing substitute substrates for the edible fungus industry in Kang County.Using L.edodes and A.auricula cultivated through two primary methods,substrate culture and log culture,in Kang County,Gansu Province as experimental materials,sensory parameters such as fruit body size and texture characteristics,as well as differences in nutritional content including fat,protein,crude polysaccharides,and mineral element levels were determined and compared in this study.Results showed that the quality of L.edodes cultivated with substrate culture was superior to that cultivated on logs,characterized by regular,uniform,and aesthetically pleasing fruit bodies.Contents of major nutrients,including protein,dietary fiber,and crude polysaccharide,as well as mineral elements such as calcium,potassium,and phosphorus,were all higher than those of log-cultivated L.edodes.Specifically,the crude polysaccharide content reached 22.6 g/kg,representing a significant increase of 85.25%compared with that in log cultivation,contents of calcium and phosphorus were 20.1 mg/kg and 1.68 g/kg,respectively,increasing significantly by 91.43%and 52.73%,respectively.The overall quality of A.auricula using substrate culture was also superior to that of log-cultivated A.auricula,as reflected by regular and uniform fruit body shape,as well as better commercial quality and palatability indicated by texture characteristics.Contents of major nutrients,including fat,protein,crude polysaccharide,melanin,total amino acids,and mineral elements such as calcium and phosphorus,were all higher to varying degrees than those of log-cultivated A.auricula.Among them,contents of fat,protein,and amino acid were 2.0,14.9,and 10.1 g/kg,respectively,representing significant increases of 100%,77.38%,and 741.67%compared with those in log-cultivated A.auricula,respectively.In conclusion,substrate culture is considered more suitable for the development of the L.edodes and A.auricula edible fungus industry in Kang County,Gansu Province.
