为解决毛竹(Phyllostachys edulis)笋用林长期过量使用化肥导致的竹笋品质下降及环境污染问题,降低毛竹笋用林化肥用量,培育高品质冬笋,使用菌解小分子鱼肽肥(简称鱼肽肥)与化肥配施,设置 3 个施肥处理,分别为T1(施化肥375 kg·hm-2)、T2(施化肥187.5 kg·hm-2、施鱼肽肥75 L·hm-2)、T3(施鱼肽肥150 L·hm-2).通过测定毛竹冬笋的产量、营养物质、呈味物质、氨基酸质量分数,分析化肥减量配施鱼肽肥对毛竹冬笋产量及品质的影响.结果表明:随着鱼肽肥替代化肥比例的增加,毛竹冬笋产量先升高、后降低,且T2、T3 处理显著高于T1处理.毛竹冬笋淀粉、可溶性蛋白、总氨基酸质量分数逐渐升高,可溶性糖质量分数先升高、后降低;T2、T3 处理毛竹冬笋的淀粉、可溶性糖、可溶性蛋白质量分数显著高于T1 处理,但总氨基酸质量分数在各处理间差异不显著.总酸、单宁、总黄酮、纤维素、木质素质量分数逐渐降低,且T3 处理显著低于T1 处理.可溶性糖与总酸质量分数比及甜味氨基酸质量分数显著升高,苦味氨基酸组分占比显著降低.冬笋品质综合评价表明,T2、T3 处理的冬笋品质综合指数显著高于T1 处理,但T2、T3 处理间差异不显著.化肥减量配施菌解小分子鱼肽肥能显著提高毛竹冬笋产量及营养品质,并改善竹笋适口性.综合考虑冬笋产量及品质,菌解小分子鱼肽肥替代 50%化肥(T2)处理可在实际生产中推广应用.

To address the problems of decreased bamboo shoot quality and environmental pollution caused by the long-term ex-cessive application of chemical fertilizers in Phyllostachys edulis shoot-producing forests,reduce chemical fertilizer usage,and cultivate high-quality winter bamboo shoots,microbial hydrolyzed small-molecule fish peptide fertilizer(abbreviated as fish peptide fertilizer)was combined with chemical fertilizers.Three fertilization treatments were set up:T1(chemical fer-tilizer application at 375kg·hm-2),T2(chemical fertilizer at 187.5 kg·hm-2+fish peptide fertilizer at 75 L·hm-2),and T3(fish peptide fertilizer at 150 L·hm-2).The yield,nutrients,flavor substances,and amino acid contents of P.edulis winter bamboo shoots were determined to analyze the effects of reduced chemical fertilizer combined with fish peptide fertilizer on the yield and quality of winter bamboo shoots.The results showed that with the increase in the replacement ratio of fish peptide fertilizer to chemical fertilizer,the yield of winter bamboo shoots first increased and then decreased,and the yields in T2 and T3 treatments were significantly higher than that in T1.The contents of starch,soluble protein,and total amino acids in winter bamboo shoots gradually increased,while the soluble sugar content first increased and then de-creased.The contents of starch,soluble sugar,and soluble protein in T2 and T3 treatments were significantly higher than those in T1,but there was no significant difference in total amino acid content among all treatments.The contents of total acid,tannin,total flavonoids,cellulose,and lignin gradually decreased,and those in T3 treatment were significantly lower than those in T1.The ratio of soluble sugar to total acid content and the content of sweet amino acids significantly in-creased,while the proportion of bitter amino acids significantly decreased.Comprehensive evaluation of winter bamboo shoot quality indicated that the comprehensive quality indices of T2 and T3 treatments were significantly higher than that of T1,but there was no significant difference between T2 and T3.Reducing chemical fertilizer application combined with mi-crobial hydrolyzed small-molecule fish peptide fertilizer can significantly improve the yield and nutritional quality of P.edu-lis winter bamboo shoots and enhance their palatability.Considering the yield and quality comprehensively,the treatment of replacing 50%chemical fertilizer with microbial hydrolyzed small-molecule fish peptide fertilizer(T2)can be popularized and applied in practical production.
