紫色叶用莴苣色差参数及花青素含量的相关性分析OA

以紫色叶用莴苣为研究对象,系统分析叶片色差参数(亮度L*、红度a*、黄度b*、彩度C*、饱和度S*)与花青素含量的相关性,旨在建立基于色差分析的紫色叶用莴苣花青素含量快速检测方法.结果表明,不同品种叶用莴苣的花青素含量差异显著(91.54~528.42 μg·g-1),呈现丰富的紫色梯度变异;随着叶色由浅紫向深紫转变,L*持续降低,b*呈先降后升的趋势,a*则表现为"上升-下降-再上升"的变化特征;相关性分析表明,花青素含量与a*呈极显著正相关(相关系数为 0.866),与b*、C*均呈显著正相关(相关系数为0.800).综合分析表明,a*可作为紫色叶用莴苣花青素含量预测的关键色差指标.

Leaf color is acrucial phenotypic trait for breeding and quality evaluation of lettuce varie-ties.In this study,purple lettuce was used as the study object,and the correlation between leaf color parameters(lightness L*,redness a*,yellowness b*,chroma C*,saturation S*)and anthocyanin content was systematically analyzed,aiming to establish a rapid detection method for detecting antho-cyanin content in purple lettuce based on color analysis.The results showed that the anthocyanin con-tent among different lettuce varieties varied significantly(ranging from 91.54 to 528.42 μg·g-1),ex-hibiting abundant purple gradient variation.As the leaf color changed from light purple to dark pur-ple,the L* value continuously decreased,the b* value first decreased and then increased,and the a*value showed a fluctuating trend of increase-decrease-increase.Correlation analysis demonstrated that anthocyanin content was significantly positively correlated with the a* value(r=0.866)and with the b* and C* values(r=0.800).Comprehensive analysis showed that the a* value could serve as a key color indicator for predicting anthocyanin content in purple lettuce.
