以皂角刺为原料,采用热风干燥对其进行处理,选择皂角刺的含水率、水分比、干燥速率、有效水分扩散系数(Deff)及干燥活化能(Ea)为评价指标,探究热风干燥温度(30~70℃)对皂角刺干燥特性、干燥动力学、生物组成及活性影响.实验结果显示:干燥温度对皂角刺中总皂苷、总多酚、总黄酮的含量及α-葡萄糖苷酶抑制活性均有影响.随温度升高,皂角刺干燥时间缩短、水分比降低、干燥速率加快,Deff为 2.34×10-10~4.00×10-10 m2/s,Ea为 11.93 kJ/mol.随温度升高,皂角刺中总皂苷、总多酚、总黄酮与α-葡萄糖苷酶抑制活性均呈先增加后下降趋势,在60℃下皂角刺干燥速率较快,总皂苷(35.06±4.61 mg/g)、总多酚(92.44±1.12 mg/g)、总黄酮(48.38±2.21 mg/g)、α-葡萄糖苷酶抑制活性(59.36%±5.0%)达到最高.用HPLC测定皂角刺提取物中表儿茶素、花旗松素、芦丁、槲皮苷、漆黄素、芹菜素等多酚化合物的变化,结果显示:60℃下皂角刺中这6 种常见多酚化合物的含量也显著高于其他温度下的含量.对皂角刺干燥过程的动力学模型拟合结果显示:7 种干燥模型中,Modified Henderson and Pabis模型的R2为0.996,拟合效果最佳.

Using Gleditsia sinensis Lam.thorns(GST)as raw material,hot air drying was applied for treatment.The moisture content,moisture ratio,drying rate,effective moisture diffusion coefficient(Deff),and activation energy of drying(Ea)of GST were selected as evaluation indicators to explore the effects of hot air drying temperature(30-70℃)on its drying characteristics,drying kinetics,biological composition and bioactivity.The results showed that the drying temperature had an impact on the content of total saponin,total phenol,total flavonoid and α-glucosidase inhibitory activity of GST.As the temperature increased,the drying time of the GST was shortened,the moisture ratio decreased,and the drying rate increased.The Deff was 2.34×10-10-4.00×10-10 m2/s,and the Ea was11.93 kJ/mol.With the increase of temperature,the inhibitory activity of total saponin,total phenol,total flavonoid and α-glucosidase in GST first increased and then decreased.At 60℃,the drying rate of GST was faster,total saponin(35.06±4.61 mg/g),total phenol(92.44±1.12 mg/g),total flavonoid(48.38±2.21 mg/g),and α-glucosidase inhibitory activity(59.36%±5.0%)reached the highest.The changes of epicatechin,taxifolin,rutin,quercetin,fisetin,and apigenin in the extract of GST were determined by high performance liquid chromatography(HPLC).The results showed that the contents of these six common polyphenols in GST at 60℃were significantly higher than those at other temperatures.The fitting results of kinetic model for the GST drying process showed that among the seven drying models,the Modified Henderson and Pabis model had the best fitting effect with R2 of 0.996.
