虹鳟鱼卵与山女鳟鱼卵营养成分的比较分析OA
Comparative analysis of nutritional components in eggs of rainbow trout(On-corhynchus mykiss)and masu salmon(Oncorhynchus masou)
为评估虹鳟与山女鳟鱼卵的营养品质及其作为新型鱼卵加工原料的潜力,本研究测定了虹鳟(On-corhynchus mykiss)和山女鳟(Oncorhynchus masou)两种鱼卵的常规营养成分与氨基酸组成.结果显示,虹鳟鱼卵的含水量(59.40%±0.20%)、粗脂肪含量(6.46%±0.29%)均显著低于山女鳟鱼卵(分别为 64.60%±0.17%和10.18%±0.43%),但其粗蛋白含量(32.17%±0.07%)则显著高于山女鳟鱼卵(23.09%±0.01%).两种鱼卵均检测出除色氨酸外的 17 种氨基酸.虹鳟与山女鳟鱼卵的总必需氨基酸含量(TEAA)分别为 14.86%和 16.23%,总鲜味氨基酸含量(TDAA)分别为 10.34%和 9.96%,总氨基酸含量(TAA)分别为 29.99%和 31.38%.必需氨基酸总量(TEAA)与总氨基酸含量(TAA)的比值(EAA/TAA)分别为 49.54%和 51.71%,氨基酸评分(AAS)表明两者的第一限制性氨基酸均为苯丙氨酸+酪氨酸,第二限制性氨基酸均为甲硫氨酸+胱氨酸.研究表明,虹鳟鱼卵呈现出高蛋白、低脂肪的鲜明特点,而山女鳟鱼卵的常规营养成分比例更接近俄罗斯鲟鱼卵.尽管两者在总氨基酸含量上与高端鲟鱼卵存在差距,但凭借其良好的氨基酸组成和显著的养殖优势,均具有开发成为特色鱼卵制品的潜力.
To evaluate the nutritional quality and potential as novel raw materials for processed fish egg products,this study determined and compared the proximate composition and amino acid profiles of rainbow trout(Oncorhyn-chus mykiss)eggs and masu salmon(Oncorhynchus masou)eggs.The results showed significant differences in their basic nutrients.The moisture content(59.40%±0.20%)and crude fat content(6.46%±0.29%)of rainbow trout eggs were significantly lower than those of masu salmon eggs(64.60%±0.17%and 10.18%±0.43%,re-spectively).Conversely,the crude protein content of rainbow trout eggs(32.17%±0.07%)was significantly higher than that of masu salmon eggs(23.09%±0.01%).Both types of eggs contained 17 amino acids(exclu-ding tryptophan).The total essential amino acid(TEAA)contents were 14.86%and 16.23%,the total delicious amino acid(TDAA)contents were 10.34%and 9.96%,and the total amino acid(TAA)contents were 29.99%and 31.38%for rainbow trout and masu salmon eggs,respectively.The ratios of TEAA to TAA(EAA/TAA)were 49.54%and 51.71%,respectively.Amino acid score(AAS)indicated that phenylalanine+tyrosine was the first limiting amino acid,and methionine+cysteine was the second limiting amino acid for both.The study reveals that rainbow trout eggs are characterized by high protein and low fat,while the proximate composition of masu salmon eggs is more similar to that of Russian sturgeon eggs.Although the total amino acid content of both trout eggs is lower than that of premium sturgeon eggs,their well-balanced amino acid profiles,combined with significant aqua-culture advantages(shorter production cycle,lower cost),suggest promising potential for developing distinctive fish egg products or alternatives for different market segments.
