Analysis of Body Compositions and Amino Acid Components on Chinese Soft-shell Turtle(Pelodiscus sinensi)in Rice-turtles Co-culture System

为促进稻鳖综合种养生态模式的推广应用,以初始体重为(410.56±10.95)g的中华鳖为研究对象,设置池塘养殖为对照组[养殖密度500只·(667 m2)-1]、稻田养殖为试验组[养殖密度100只·(667 m2)-1],每组3个重复,均投喂商品饲料并按"四定原则"管理,养殖周期84 d,分别于2024年7月和9月采集样品,系统分析中华鳖肌肉与裙边的体成分、质构参数及氨基酸组成.结果表明,(1)体成分方面,稻田养殖模式显著降低中华鳖肌肉脂肪含量,7月和9月分别较池塘养殖降低20.54%和25.15%;肌肉和裙边蛋白质含量略高于池塘养殖,且两种模式下蛋白质、脂肪含量随养殖时间延长呈显著升高趋势.(2)质构特性上,稻田鳖肌肉硬度、胶黏性和咀嚼性显著优于池塘鳖,7月分别高出16.96%、35.42%和30.97%,9月分别高出7.52%、39.54%和45.11%,且两种模式下上述指标均随养殖时间延长显著提升.(3)氨基酸组成方面,两种模式下肌肉必需氨基酸中赖氨酸(Lys)含量最高,非必需氨基酸中谷氨酸(Glu)含量最高,且稻田鳖相关氨基酸含量多高于池塘鳖;9月稻田鳖肌肉中总氨基酸(TAA)、鲜味氨基酸(DAA)、药用氨基酸(MAA)总量显著高于池塘鳖,其中TAA较池塘养殖增加13.39%.(4)营养评价表明,两种模式下中华鳖肌肉的必需氨基酸/氨基酸总量(EAA/TAA)为42.27%~44.42%,必需氨基酸/非必需氨基酸(EAA/NEAA)为73.21%~79.91%,均超过FAO/WH O理想蛋白质推荐标准(40%和60%),第一限制性氨基酸均为蛋氨酸+半胱氨酸(Met+Cys),且稻田鳖的氨基酸评分(AAS)、化学评分(CS)及必需氨基酸指数(EAAI)均优于池塘鳖.综上,稻鳖综合种养模式可显著改善中华鳖肌肉品质,降低脂肪含量并提升氨基酸营养价值,是高效生产优质蛋白的创新生态养殖模式.

In orderto promote the popularization and application of the ecological rice-turtle integrated farming model,this study took Chinese soft-shelled turtles(Pelodiscus sinensis)with an initial body weight of(410.56±10.95)g as the research object.Two groups were established:the control group under pond farming[stocking density of 500 individuals per 667 m2]and the experimental group under rice-turtle integrated farming[stocking density of 100 individuals per 667 m2],with 3 replicates in each group.All turtles were fed commercial feed and managed in accordance with the"four fixed principles"(fixed time,fixed quantity,fixed quality,and fixed location)for a breeding cycle of 84 days.Samples were collected in July and September 2024,respectively,to systematically analyze the body composition,texture parameters,and amino acid composition of the muscle and calipash of Chinese soft-shelled turtles.The results showed that:(1)In terms of body composition,the rice-turtle integrated farming model significantly reduced the muscle fat content of Chinese soft-shelled turtles by 20.54%in July and 25.15%in September compared with the pond farming model.The protein content in both muscle and calipash was slightly higher than that in the pond farming group,and the protein and fat contents in both models showed a significant increasing trend with the extension of breeding time.(2)Regarding texture characteristics,the muscle hardness,adhesiveness,and chewiness of turtles in the rice-turtle group were significantly superior to those in the pond group.In July,these parameters were 16.96%,35.42%,and 30.97%higher,respectively.In September,they were 7.52%,39.54%,and 45.11%higher,respectively.Moreover,the aforementioned texture indicators in both models increased significantly with prolonged breeding time.(3)For amino acid composition,lysine(Lys)was the most abundant essential amino acid,and glutamic acid(Glu)was the most abundant non-essential amino acid in the muscle of turtles under both farming models.The contents of these relevant amino acids in the rice-turtle group were mostly higher than those in the pond group.In September,the total contents of total amino acids(TAA),delicious amino acids(DAA),and medicinal amino acids(MAA)in the muscle of the rice-turtle group were significantly higher than those in the pond group,with TAA increasing by 13.39%compared with the pond farming model.(4)Nutritional evaluation indicated that the ratios of essential amino acids to total amino acids(EAA/TAA)and essential amino acids to non-essential amino acids(EAA/NEAA)in the muscle of Chinese soft-shelled turtles under both models ranged from 42.27%to 44.42%and 73.21%to 79.91%,respectively,both exceeding the FAO/WHO recommended standards for ideal protein(40%and 60%).The first limiting amino acid in both groups was methionine+cysteine(Met+Cys).Additionally,the amino acid score(AAS),chemical score(CS),and essential amino acid index(EAAI)of turtles in the rice-turtle group were all superior to those in the pond group.In conclusion,the rice-turtle integrated farming model can significantly improve the muscle quality of Chinese soft-shelled turtles by reducing fat content and enhancing amino acid nutritional value,making it an innovative ecological farming model for the efficient production of high-quality protein.
