基于表面增强拉曼光谱(surface enhanced Raman spectroscopy,SERS)技术在食源性霉菌毒素快速检测中的独特优势,综述常见食源性霉菌毒素分子结构、拉曼峰位及拉曼峰归属,重点分析常见食源性霉菌毒素SERS检测的增强机制、增强基底和特异性识别元件,包括讨论抗体、适配体、分子印迹等技术与贵金属纳米结构结合用于高性能SERS传感器构建,讨论横向流动分析快速检测霉菌毒素SERS传感技术的研究现状,阐述化学计量学和机器语言在SERS霉菌毒素传感系统中的典型步骤,指出SERS中亟待解决的问题,并对SERS生物传感器的未来发展方向进行展望,以期为SERS技术应用于食源性霉菌毒素快速检测研究提供参考.

Based on the unique advantages of Surface enhanced Raman spectroscopy(SERS)in the rapid detection of foodborne mycotoxins,the molecular structure,Raman peak location and Raman peak attribution of common foodborne mycotoxins were reviewed.The enhancement mechanism,enhancement substrate and specific recognition elements for SERS detection of common foodborne mycotoxins were analyzed,including discussion on the application of antibody,aptamer,molecular imprinting and other technologies combined with precious metal nanostructures in the construction of high-performance SERS sensors.The research status of SERS sensing technology for rapid detection of mycotoxins by lateral flow analysis was discussed,the typical steps of chemometrics and machine lan-guage in SERS mycotoxin sensing system were expounded,the problems to be solved in SERS were pointed out,and the future development direction of SERS biosensor was prospected to provide a refer-ence for the application of SERS technology in the rapid detection of mycotoxins in food.
